MIAMI VICE COCKTAIL RECIPE

Ingredients, recipe tips, what's in a miami vice.

Today we're going to dive into the tantalizing world of the Miami Vice, a refreshing mix that's sure to transport you straight to the sun-soaked beaches of Florida. Also fondly known as the "Cruise Ship Cocktail," this tropical treat perfectly blends the flavors of two classic beach drinks - the Piña Colada and the Strawberry Daiquiri .

Miami Vice cocktail with red and creamy layers in a hurricane glass, with pineapple and strawberry garnishes

  • 2 ½ Ounces White Rum
  • ¾ Ounce Lime Juice
  • ½ Ounce Simple Syrup
  • 1 Cup Strawberries
  • 1 Cup Crushed Ice
  • 1 Ounce Coconut Cream
  • 2 Ounces Pineapple Juice
  • 1 Pineapple Slice or Strawberry (garnish)
  • Pour 1.5 ounces of rum, all of the lime juice, simple syrup and strawberries, and half of the crushed ice in a blender.
  • Blend until smooth.
  • Pour the mixture into a hurricane glass.
  • Pour the rest of the rum, the coconut cream, and the pineapple juice into the blender.
  • Blend again until smooth.
  • Pour this mixture slowly onto the top of the other mixture, causing a layered effect.
  • Garnish with a pineapple slice or strawberry, and enjoy!

The recipe above results in two horizontal layers - Strawberry Daiquiri , then Piña Colada . If you want to go above and beyond, you can pour them at the same time, with a knife separating them down the middle of the glass. This step is much easier with 2 people - trust me!

To make it a little bit quicker, easier, and cheaper, you can swap out the lime juice, simple syrup, and strawberries, for a strawberry daiquiri mix. It won't be as fresh or delicious, but it'll get the job done.

This is a really sweet, frozen drink, meaning you can definitely up the rum a decent amount without it being too overpowering. Play around with it!

Use premium cream of coconut in the Piña Colada part if you want it to be extra creamy.

If you prefer one of the sides more than the other, adjust accordingly. Have some fun with it!

The Miami Vice is a colorful fusion of tropical flavors. Its main ingredients are rum, pineapple juice, and cream of coconut for the Piña Colada layer, combined with a sweet layer of lime juice, simple syrup, strawberries, and even more rum.

Some people like to substitute out the strawberry daiquiri ingredients for a store-bought mix. This'll work fine, but it goes without saying that fresh ingredients wins every time.

Best Rum For A Miami Vice

When it comes to the Miami Vice, a quality white rum is preferred. White rum is lighter and more subtle, which complements the tropical flavors without overpowering them. Bacardi Superior is a fine choice due to its clean, fresh palate and slightly fruity notes.

The exact origins of the Miami Vice cocktail are somewhat shrouded in mystery. It's widely believed to have been born in the 1980s, around the time of the popular "Miami Vice" television series.

Some others believe that the drink was actually created before the show even existed, meaning it would have no association with the show.

Regardless, it's now a favored drink on cruise ships and beach bars worldwide, known for its visually striking layers and its ability to instantly transport you to a sunny beachside paradise.

What Does A Miami Vice Taste Like?

The Miami Vice presents a harmonious blend of tropical flavors. The upper layer of Piña Colada provides a creamy, sweet, and tangy taste from the combination of coconut cream, pineapple juice, and rum.

This is complemented by the bottom of Strawberry Daiquiri , offering a fruity, slightly acidic contrast. The rum brings a warm richness, tying all the flavors together for a perfectly balanced tropical treat.

carnival cruise miami vice recipe

Few cocktails evoke such a sense of time and place—or earn such strong reactions—as the Miami Vice. The drink is essentially equal parts frozen Strawberry Daiquiri and Piña Colada layered on top of each other. While its origins are murky, it’s thought to have originated in its eponymous city, pre-dating the popular 1980s television series of the same name.

Let’s get this out of the way: The Miami Vice is not meant to be a serious drink. In its original, intended form, it’s the cocktail equivalent of pressing two different buttons on the self-serve soda fountain at a Burger King. It’s also delicious, because Strawberry Daiquiris are delicious, and Piña Coladas are delicious. Both use flavor profiles that complement each other, so of course they taste great in a glass together.

Every comment you hear saying, “Your bartender will hate you if you order this,” misses the point. The Miami Vice came about during an era that saw the proliferation of frozen drink machines, in which the original Frozen Margarita machine (which dates to Mariano’s restaurant in Dallas in 1971) had spread across the hemisphere and was used to pre-batch countless sour-style drinks that could be poured quickly on demand. Ordering a Miami Vice, at the time of its origin, was no less taxing for a bartender than pulling two handles instead of one.

The slushy-machine version is still perfectly acceptable, and arguably an ideal way to enjoy this drink. However, as the decades wore on and bartenders sought to reinvent recipes of the past, new iterations of the Miami Vice that use fresh ingredients began to crop up, which also involved being blended individually to order. These are undeniably more complicated to make, as they essentially involve making two drinks rather than one, but can lead to a much tastier final result.

Should I Make a Miami Vice from Scratch?

If you’ve got a couple frozen drink machines and plan on making enough Miami Vices to justify batching Strawberry Daiquiris and Piña Coladas on tap, there’s little need to bother with the recipe below. However, for those that want to put in the time to make this drink at home for themselves, fresh ingredients that are blended to order can create an entirely different style of drink that offers extra flavor.

Essentially, the difference between the two styles of Miami Vice is akin to ordering a fast-food burger versus one grilled at home—both can be delicious in their own way, and each has its time and place.

Why This Recipe Works

The Miami Vice works for the same reason each of its base drinks, the Strawberry Daiquiri and the Piña Colada, works. It follows the classic sour template of spirit, sweetness, and sour lime juice, but with complementary fruit flavors layered in.

When it comes to flavor pairings in both the culinary and drinks world, there’s an old saying, “What grows together goes together.” This is particularly true in the world of tropical fruits, where it’s easy to mix and match produce while always finding a winning combination. Strawberry, pineapple, coconut, lime, and sugar cane-based spirits are all naturally complementary, and you can get away with a lot of tweaking by changing ratios or substituting other similar fruits to taste.

If you’ve got a blender, a bit of extra time, and don’t mind putting in the work to make one of the most purely refreshing smoothie-like cocktails ever created, here’s how to create the Miami Vice yourself.

Ingredients

2 ounces rum, divided

1 cup strawberries, chopped

1 ounce lime juice, freshly squeezed

1/2 ounce simple syrup

2 ounces cream of coconut

2 ounces pineapple juice

Garnish: pineapple slice

In a blender, add 1 ounce of the rum, strawberries, lime juice, simple syrup and 1 cup crushed ice and blend until smooth.

Pour into a hurricane glass and set in the freezer.

Wash and dry the blender thoroughly.

In the clean blender jar, add the remaining 1 ounce of rum, cream of coconut, pineapple juice and 1 cup crushed ice and blend until smooth.

Pour into the hurricane glass that already contains the Strawberry Daiquiri, creating a layered effect.

Garnish with a pineapple slice.

How to Layer a Miami Vice

The go-to move to layer most drinks is to pour the top layer over the back of a spoon to float it on top of the liquid already in the glass. However, with the slushie-like consistency of the Miami Vice, this step should be unnecessary. As long as you pour each component individually and store the partially-constructed drink in the freezer while blending the second half (this will prevent it from melting), the drink should layer on its own.

Tilting the glass at a 45-degree angle to create more surface area can also help, when attempting to layer the second half, and create a different visual effect. Just remember that some swirling and interplay between the layers is to be expected, and in fact helps to create the cocktail’s dramatic look.

Miami Vice Cocktail Recipe

Transport to a tropical paradise without ever leaving the comfort of your home. The Miami Vice cocktail takes the best of a strawberry daiquiri and a piña colada for a delicious hot day refresher.

Miami Vice featured

Whenever I’m enjoying a hot day with friends or throwing a beach-themed party, the Miami vice cocktail comes to mind. I love a Strawberry Daiquiri , but a Piña Colada isn’t without its charm. So why choose between the two? The combination of tropical ingredients and blended ice make you feel like you’re on the sun-soaked shores of Miami.

Not only is this cocktail sweet and delicious, but the layered colors look stunning as well. If you’re ready to take your mixology to the next level and produce a drink that’s incredibly Instagram-worthy, grab your blender and ingredients for a quick and easy cocktail.

Why You Will Love This Cocktail Recipe

  • If you like a fruity cocktail, this drink is for you.
  • The bright and bold colors are simply stunning.
  • Perfect for a party or gathering with friends on a hot day.
  • A very easy drink to prepare in just minutes.

Miami Vice ingredients

  • Jigger (to measure liquids)
  • A citrus juicer or squeezer
  • Separate containers for both mixes (strawberry daiquiri and piña colada)
  • A hurricane or tall cocktail glass
  • A spoon or spatula for layering the piña colada mix over the strawberry daiquiri
  • Optional: a straw and a toothpick to hold the garnish (strawberry or pineapple slice)

Ingredients

  • 2 oz light rum
  • 2 oz whole strawberries or strawberry puree
  • 1 oz freshly squeezed lime juice
  • 1 oz simple syrup or granulated sugar
  • 1 oz coconut cream for example, Coco López
  • 2 oz pineapple juice
  • 1 cup of ice separated

Instructions

carnival cruise miami vice recipe

  • Fill a hurricane or tall cocktail glass halfway with the strawberry daiquiri mix.

carnival cruise miami vice recipe

  • Add a strawberry or pineapple slice as garnish if desired.

Check out these ways you can alter the Miami Vice cocktail to suit your tastes!

  • Spiced Miami Vice: Add a subtle kick to your cocktail by swapping out the light rum for a spiced rum. This will add warmth and will pair amazingly with the creamy coconut and sweet fruit.
  • Passion Fruit Miami Vice: Honestly, you could add just about any fruit to this cocktail and it would probably still taste phenomenal. However, we’re sticking with the tropical theme for now; add some passion fruit juice or puree to the piña colada part of this recipe for a unique flavor.
  • Mango Miami Vice: More fruit! Either swap out the strawberries with mango chunks to create a mango daiquiri, or simply go 50/50 with mango and strawberry. The tropical flavors will be truly to die for.
  • Sparkling Miami Vice: Top off your cocktail with a splash of club soda, sprite, or sparkling wine once you’ve poured the layers into the glass. This light and bubbly finish makes for a more festive cocktail ideal for celebrations, while lightening the texture of your drink slightly.

Tips and Tricks

Making a Miami Vice for the first time might seem daunting, but with these handy dandy tips and tricks, you’ll be a pro in no time.

  • High quality ingredients:  Using fresh ingredients like ripe strawberries, 100% pineapple juice, and freshly squeezed lime juice can make your cocktail taste so much better. Likewise, if you opt for a high quality coconut cream and fork out a little more for a great rum, you’ll get a richer taste.
  • Layering the drink:  To get that layered appearance, slowly pour the piña colada mix over the strawberry daiquiri, and use the back of a large spoon to help slow your pour if necessary. Just go slowly and gently to avoid combining your layers, although it won’t be the worst thing in the world if you do (the color will be a pretty pink).
  • Blending:  When you’re blending your daiquiri and piña colada mixes, aim for a slush-like consistency by adding a little more ice or liquid as needed. You want the drink to be thick enough to hold the layers, but not too thick that it becomes difficult to pour or sip.
  • Chill your glass:  Before you start making your cocktail, place your cocktail glass in the freezer for 10-15 minutes to keep it cool. This will help keep your drink colder for longer, which is especially important for blended drinks to keep the texture.
  • Adjust sweetness to taste:  This is a sweet cocktail, so you may want to hold off before incorporating the simple syrup or sugar. You can always make adjustments as you go by tasting your layers before removing them from the blender.

Miami Vice featured

This cocktail is best served in a chilled hurricane or tall cocktail glass with a straw, although you can use any tall glass you have on hand. Drinking through a straw allows you to drink each layer as you wish, or blend them together.

Absolutely, you can easily create a mocktail version of the Miami Vice cocktail by substituting the rum with more pineapple juice, coconut or almond milk, or a blend of fruit juices. You could also use a zero-proof rum like Ritual’s rum alternative.

For the best results, use a light or white rum for this cocktail. The slight sweetness pairs well with the fruity flavors of the drink without overpowering them, which a dark rum would do. If you prefer to experiment with different flavors, you can also try using a flavored rum such as coconut or pineapple.

How to Store a Miami Vice Cocktail

If you’ve decided to make this cocktail ahead of time, you can prepare the strawberry daiquiri and piña colada mixes individually and store them in the refrigerator in covered containers. Give each mix a stir before serving (keep in mind that the consistency will not be the same, as the ice will likely have melted).

You can also store any leftovers or made-ahead mix in the freezer, which will keep in an airtight container until you’re ready to serve. Simply let defrost for a couple of hours before blending the ingredients again and serving. If you have a glass of Miami Vice that has already been layered, you can keep it in the fridge for up to a day, but remember that no method of storage will leave your drink tasting as great as it did when it was fresh.

The Miami Vice Recipe

The Miami Vice Recipe

How To Make A Miami Vice

Can a spiked fruit smoothie be a classic cocktail? Yes… Yes it can. The Miami Vice is half Piña Colada , half Strawberry Daiquiri , and 100 percent delicious. Incorporating rum and an ensemble of fruit juices, this visually stunning frozen drink emerged somewhere out of Miami’s nightclub scene in the early ‘80s.

By many accounts, the cocktail predates the “Miami Vice” cop drama that first aired in 1984, but there isn’t any documentation of its creation. With the help of David Wondrich, the only early written mention of the cocktail we’ve found is from the concessions menu at the 1987 U.S. Open in Queens, N.Y. It reads, “At the Margarita Factory, they have something called Miami Vice Cooler, which is alternating stripes of Strawberry Daiquiri and Piña Colada — red, white, red.” Wherever it came from, it lives on as a beach bar staple.

The drink is typically served with the Daiquiri on the bottom and the Piña Colada on top, but there’s no wrong way to do it. You can pour them side by side vertically, weave alternating stripes, or just mix both cocktails together completely — though it certainly won’t look as cool. Flavor-wise, this cocktail is as tropical as they come. There’s a lot of fruit involved, so it’s on the sweet side, but the tart acidity from the Strawberry Daiquiri balances out the mix.

Miami Vice Ingredients

  • 1 ½ ounces white rum
  • 1 ½ ounces of aged rum
  • 1 cup chopped strawberries
  • ¾ ounce lime juice
  • ½ ounce simple syrup
  • 2 ounces cream of coconut
  • 2 ounces pineapple juice
  • Garnish: pineapple wedge

Miami Vice Directions

  • In a blender, add 1 ½ ounces of white rum, the strawberries, simple syrup, lime juice, and 1 ½ cups of crushed ice.
  • Blend until smooth.
  • Pour mixture into a hurricane glass and set in the freezer.
  • Wash the blender.
  • In the blender, add 1 ½ ounces of aged rum rum, cream of coconut, pineapple juice, and 1 ½ cups of crushed ice.
  • Pour mixture into the hurricane glass, layering the second cocktail on top of the first.
  • Garnish with a pineapple wedge.

  • ¾ ounce freshly squeezed lime juice
  • ¾ ounce triple sec or another orange liqueur
  • 1½ ounces rum

Instructions

  • In a blender, combine all the piña colada layer ingredients. Blend until smooth and pour into a pitcher.
  • Rinse the blender.
  • Combine all the strawberry daiquiri ingredients into the blender, blending until smooth.

Quick Miami Vice Cocktail Variations

Just because there aren't any formal Miami Vice variations doesn't mean we don't endorse a few informal ones. There are tons of ways to put a new spin on this frozen drink, and these are just a handful.

  • For a stronger flavor, use pineapple rum or spiced rum. If rum isn't your go-to liquor, substitute it for an equal amount of tequila.
  • Swap out the fruity ingredients.  Using fresh or frozen raspberries, blackberries, melon, mango, or papaya is one way to personalize a Miami Vice. Just make sure you don't omit the lime juice when swapping out the fruits; you need it to balance sweetness.
  • Grab some blue curaçao for a pop of blue.  Just add ½ ounce blue curaçao to the piña colada layer.

Get the party started with this chilled, fruity drink that's perfect for the summertime! The next time you're getting ready to sit poolside, mix up a tall glass of Miami Vice. Just a small sip of this refreshing cocktail and the coastal city will feel that much closer to home.

Tasting Notes

The Miami Vice cocktail is a taste explosion. One side of the Piña Colada layer has the smooth, creamy flavor of coconut and pineapple. However, the strawberry burst of tartness and sweetness in the Strawberry Daiquiri. Together, they create a fruity, refreshing, and energetic blend that tastes great.

Glassware and Equipment

To achieve the velvety, slushy texture of a Miami Vice, a blender is necessary. Using a measuring cup and spoon is also necessary for precise ingredient portioning. To accentuate the gorgeous layers and bring out the tropical flavor, serve this wonderful concoction in a hurricane glass.

Ingredients

  • 1 oz. white rum (for the Piña Colada layer)
  • 1 oz. white rum (for the Strawberry Daiquiri layer)
  • 1 oz. coconut cream
  • 1 oz. pineapple juice
  • 1 cup frozen strawberries
  • ½ oz. lime juice
  • Optional: a splash of grenadine for extra sweetness

Instructions

  • Start with the Piña Colada layer: Blend 1 oz. white rum, coconut cream, pineapple juice, and ½ cup ice until smooth. Pour it into your glass.
  • Next, make the Strawberry Daiquiri layer: Blend 1 oz. white rum, frozen strawberries, lime juice, optional grenadine, and the remaining ½ cup ice. Blend until smooth.
  • Carefully pour the Strawberry Daiquiri mixture over the Piña Colada layer, creating a beautiful two-layer effect.
  • Garnish with a slice of pineapple or a strawberry for that extra tropical touch.
  • Make sure to combine each ingredient until it reaches the perfect slushy consistency for the smoothest possible layers.
  • You may taste the grenadine and add more or less to make your drink sweeter.
  • Pour the Strawberry Daiquiri mixture gently over the back of a spoon to form different layers.

When to Serve

The Miami Vice is ideal for splashing some tropical flare into any occasion, including summer parties and poolside relaxing. It’s a hit at parties and a great option for warm, sunny days when you’re pining away for the beach.

Which Liquor Brands to Choose

Select premium white rum for optimal flavor. Good options are brands like Captain Morgan White Rum, Havana Club, and Bacardi. Their flavor is clear and silky, enhancing the tropical components without taking center stage.

These similar cocktails could be interesting if you are a fan of Miami Vice.

  • Mango Margarita : A tropical twist on a traditional margarita.
  • Bahama Mama : Another tropical blend, featuring coffee and rum.

The Miami Vice is vibrant and refreshing . It looks gorgeous, layered with care, and combines the tastes of a strawberry daiquiri and a piña colada.

Table of Contents

A Miami Vice is what we call the marriage of two classic tropical favorites: a strawberry daiquiri and a piña colada. One taste and you’re transported to the sunny beaches of Miami (though I’m not sure Don Johnson will join you). This is a fun one to serve at poolside parties as well, as it looks bright and fruity and will cool you and your guests off in no time.

Sometimes I can’t decide between the creaminess of a Pina Colada and fruity flavor of a Strawberry Daiquiri . Both are known for their tropical flavors, both are associated with beach fun and resort getaways. So, instead of choosing, I just make a Miami Vice and get the best of both worlds!

INGREDIENTS

  • 2 oz light rum
  • 1 oz freshly squeezed lime juice
  • 2 oz strawberries (you can also use strawberry puree)
  • 1 oz simple syrup
  • 1 oz cream of coconut
  • 2 oz pineapple juice
  • 1 cup ice (divided)

carnival cruise miami vice recipe

Equipment Needed

  • A blender (for blending the strawberry daiquiri and piña colada mixtures)
  • A measuring device (like a jigger or measuring spoons) for the light rum, lime juice, simple syrup, cream of coconut, and pineapple juice
  • A separate container (to pour and set aside the strawberry daiquiri mixture)
  • A hurricane glass or tall cocktail glass (for serving the cocktail)
  • A spatula or spoon (optional, for helping to layer the piña colada mixture on top of the strawberry daiquiri)
  • A cocktail umbrella and a straw (to garnish)

INSTRUCTIONS

Blend (The Daiquiri)

In a blender, add 1/2 cup of ice, 1 oz light rum, strawberries, lime juice, and simple syrup. Blend until smooth. Pour the strawberry daiquiri mixture into a separate container and set aside.

Blend (The Pina Colada)

In a cleaned blender, add another 1/2 cup of ice, 1 oz light rum, cream of coconut, and pineapple juice then blend until smooth.

Pour the strawberry daiquiri mixture in a glass halfway. Layer carefully the piña colada mixture on top of the strawberry daiquiri, filling the rest of the glass.

Garnish with a strawberry or pineapple slice and a cocktail umbrella (optional). Serve with a straw and enjoy your Miami Vice Cocktail!

Tips and Tricks

  • Choose high-quality ingredients:  Like most recipes, the quality of the ingredients will have a huge impact on the quality of your cocktail. For a Miami Vice, I recommend fresh strawberries, ripe pineapples, and premium rum.
  • Careful with the ice:  Pay attention to how much ice you use. Too much and your cocktail will be too thick; not enough and it will be too thin. I recommend blending each components one at a time.
  • Layering hack:  Pour the piña colada mixture gently over the back of a spoon (a bit like one of those layered shots), and into the glass of strawberry daiquiri mix.
  • Glass selection:  Go with a hurricane glass or a tall cocktail glass.

carnival cruise miami vice recipe

A typical Miami Vice contains more calories than most cocktails — around 300-400 calories. See above for some tips on how to bring that number down.

Use a straw for this one, as it will let you enjoy the flavors of both the strawberry daiquiri and the piña colada.

Yep, you can blend the strawberry daiquiri and piña colada mixtures separately and store them in the refrigerator for a few hours before the party. Then, when it’s time to serve, carefully layer the mixtures in the glasses.

carnival cruise miami vice recipe

How to Store A Miami vice

Hopefully, you still have the daiquiri and pina colada mixtures separate. If so, store them in the fridge. You can keep them for a day.

If you need to store them for longer, you can freeze them in ice cube trays. This keeps the mixtures separate from the other, maintains their quality, and lets you blend the frozen cubes when you’re ready to serve them once more.

Carnival Shares Recipes & Details New Cocktails on Next Ship Carnival Celebration

Sarah Bretz, Contributor

Sarah Bretz, Contributor

  • September 2, 2022

Carnival Cruise Line is offering a glimpse at some special Miami-inspired cocktails that were created just for its new ship Carnival Celebration .

The vessel’s debut this fall will continue to mark Carnival’s 50th birthday in PortMiami, where its Fun Ships first started sailing. It’s fitting, then, that the ship will carry themes of Miami not only through its architectural details, but also in its food and beverage offerings.

820 biscayne carnival celebration

Bar 820 will feature several Miami-inspired tropical martinis and other drinks that will infuse an essence of southern Florida throughout each voyage, and represent a mixture of local partnerships on board.

“Miami is a rich source of inspiration for drinks, and we tapped into the city’s flavors well with what we’ve developed for Bar 820. Many of the drinks we’ll serve on this ship are the product of collaboration with brilliant partners that share our hometown and our love of fun,” said Edward Allen, Carnival’s vice president of beverage operations.

Carnival Cruise Line’s beverage team created special martinis in tribute to the line’s Miami roots, and unveiled them for the first time at Tropical Distillers near downtown Miami.

Tropical Distillers’ new distillery is set for a debut of its own this fall, and will provide an important component — JF Haden’s Mango Liqueur — for one of the ship’s new cocktails, Mango 305.

Carnival also worked with local partners Magic City Garnish and Filthy Foods to source the garnishes that will adorn each cocktail. Additionally, the cruise line’s brew team worked with M.I.A. Beer Company on a collaborative beer and the brewery’s Miami Weiss beer.

At Tropical Distiller’s new storefront this week, Carnival’s beverage team introduced the Mango 305 and two of its other new cocktails — the Flamingo and the Key Lime Pie — and shared these recipes:

  • .5 oz Reàl mango puree
  • 1.5 oz Orange Juice
  • .5 oz Lemon Juice
  • 1.5 oz Flor de Cana 4 year
  • Dehydrated Mango Chip Garnish
  • 1 oz Reàl Guava Puree
  • 1 oz Lime Juice
  • 1 oz Pineapple Juice
  • 1.75 oz Bacardi Superior
  • Dehydrated Lime Wheel Garnish

Key Lime Pie

  • 1 oz Fresh Lime Juice
  • 1 oz Monin Key Lime Pie Syrup
  • .5 oz Madagascar Vanilla Syrup
  • 2 oz Bacardi Superior
  • Lime Wheel Garnish

Instructions

The instructions are the same for all three cocktails:

  • Mix all ingredients in a shaker with ice and shake vigorously
  • Double strain into a chilled martini glass
  • Add garnish

Additional beverages will be revealed when Carnival Celebration heads to Miami this fall. The new ship will join sister Mardi Gras as Carnival’s second Excel-class vessel, offering year-round seven-night Caribbean sailings starting on November 21.

The revealing of these cocktails comes just a day after Carnival announced that it is now offering its own hard seltzers across the fleet.

Why cruise lines need their private islands more than ever

  • Cruise lines spend big on private islands and destinations exclusive to their guests.
  • These private Caribbean properties are money trees for companies like Carnival and Royal Caribbean.
  • In-house destinations are becoming increasingly necessary amid rising fuel costs and port restrictions.

Insider Today

About 140 miles east of Miami, Royal Caribbean's private Bahamas island, Perfect Day at CocoCay , receives thousands of eager families virtually every day of the year.

The cruise line and many of its competitors don't just own ships — they also have land-based portfolios. Throughout the Caribbean and in countries like Honduras and Belize, practically every major cruise company has snatched up and developed beachfront properties to make exclusive to their guests.

To travelers, these secluded ports of call are convenient, safe, and cherished: "The vast majority of people love the islands," Patrick Scholes, the managing director of lodging and leisure-equity research at Truist Securities, told Business Insider.

To cruise lines, they're cash cows. And now, maybe more than ever before, a necessity as operators seek out profits while battling rising operating costs and ever-restrictive ports.

The industry is cruising into a private island renaissance

Cruise lines like Princess, Holland America, and MSC collectively own 16 ports and private destinations in the Caribbean (including properties that are still under development).

Many of them, like CocoCay, are hits.

Michael Bayley, president and CEO of Royal Caribbean International, told analysts in 2023 that the private island had seen robust demand, including from repeat travelers. So much so that the financial returns on the $350 million investment, launched in 2019, have been "exceptionally high and significantly above its target," Naftali Holtz, CFO of Royal Caribbean Group, said a few months prior.

Given travelers' appetite, Royal Caribbean has continued to expand its splashy Bahamas getaway.

Its most recent addition, the adult-only Hideaway Beach , opened in January, adding to CocoCay's 14-slide waterpark, upscale beach club, massive pool, and umbrella-lined beaches.

But it's not done: The cruise giant plans to open its next development, a 17-acre private beach club on Nassau, Bahamas' Paradise Island, in 2025.

Carnival Corp is also updating its popular private island, Half Moon Cay, with an additional berth to accommodate its largest ships, increasing the destination's guest capacity.

Like its competitor, Carnival has more plans to expand its real estate footprint — this time with Celebration Key, a $500 million exclusive resort on Grand Bahama Island, set to open in 2025.

The vacation-at-sea industry's land-based conquest could continue to grow: Given their benefits, Scholes said he wouldn't be surprised if Royal Caribbean were to announce plans to build another private island in the next five years.

Related stories

These are the three reasons cruise-run private destinations have become so important.

1. Fuel is expensive

Fuel is one of the cruise industry's biggest expenses . Fortunately, most Caribbean-based private destinations are just a night's sailing from Florida's major cruise ports.

Amid rising fuel costs, it's easy to see why cruise lines would want to plan more itineraries around these nearby stops.

In September 2023, Josh Weinstein — president, CEO, and chief climate officer of Carnival Corp — called the forthcoming Celebration Key a "win-win-win for the environment, our guests, and the people of the Bahamas," citing the property's proximity to its Florida homeports and the subsequent reduced fuel expenditure.

It could certainly be a "win" for travelers: In the same call, he told analysts that a guest-fronted fuel surcharge is "certainly not off the table."

2. Private destinations keep profits in-house

Before its debut, pre-cruise bookings for CocoCay's Hideaway Beach surpassed the company's expectations, Jason Liberty, president and CEO of Royal Caribbean Group, told analysts in October 2023.

Admission costs up to $89 per person during peak season. Nearby, entry to the more exclusive beach club could be shy of triple that cost .

Even the otherwise complimentary parts of the island have splurge-enticing options like rentable cabanas and snorkeling gear.

Travelers content with a basic beach chair and the lunch buffet don't have to ball out on these up-charged luxuries. But they sure are hard to resist, especially as cruisers have become eager to splurge on their vacations.

For families, skipping CocoCay's waterpark could be as sacrilegious as skipping Disney World during an Orlando vacation, Scholes said. A day pass to Thrill Waterpark can exceed $100 per person — that's more than $400 down the drain for a family of four in one afternoon.

These destinations have plenty of opportunities for guests to spend big. And because there's no need to rely on other excursion operators, they allow cruise lines to keep more profits in-house.

3. Some popular ports are saying "no" to giant cruise ships

The world's largest cruise ship, Royal Caribbean's Icon of the Seas , can carry 7,600 guests and 2,350 crew.

This sudden influx of travelers could overwhelm smaller destinations and their locals, like the just over 25,000 residents of Santorini, Greece, and 25,600 of Key West, Florida.

With concerns like pollution and over-tourism, it's no wonder the popular Greek island has a daily cap on cruise visitors, while its Florida counterpart has faced a fraught battle to restrict cruise tourism .

They're not alone. Cities across the US and Europe have increasingly limited travelers coming by sea — either through size restrictions, daily visitor limits, or complete bans. This includes desirable ports like Juneau, Alaska, French Polynesia, and Venice, Italy.

Ironically, at the same time, mass-market cruise lines have continued to grow the size of their vessels — so much so that several of these new mega-ships are now simply too big to fit into some ports.

So, if you can't beat the ports, why not join them? Especially if you can outfit your private properties with dozens of profit-growing amenities.
