This simple 20-Minute Christmas Salad features classic holiday ingredients , such as pecans, mandarin oranges, pomegranate seeds, and dried cranberries. They are tossed together with baby spinach, goat cheese, and homemade Honey-Mustard Lime Vinaigrette. This festive holiday salad will pair beautifully with your favorite Christmas main course (ham, prime rib, beef tenderloin, turkey, and even seafood!) and is a great addition to your holiday menu .

When I was thinking about making a perfect Christmas salad for the upcoming holidays, I wanted a recipe that used traditional holiday ingredients combined in a really simple yet delicious way. Holidays can be hectic and busy, and there is usually a lot of cooking going on. This festive salad will not take much time in the kitchen (only 20 minutes!) and will add colorfulness and vibrancy to your menu. I also wanted a salad that makes a beautiful presentation with very little effort . This recipe ticks all those boxes! It's super versatile and flexible - can be easily adjusted to what you have available . It's so simple that you can make it not only during the Christmas season but on busy weeknights during the Autumn and Winter seasons for your family and friends! - Easy and flavorful. This recipe features simple ingredients, such as spinach, pecans, dried cranberries, mandarin oranges, goat cheese, and pomegranate. The simple dressing is made entirely from scratch using only 4 ingredients: mustard, lime juice, honey, and olive oil. Despite the simplicity, this Christmas salad is so delicious and flavorful that you will be making it not only for the holidays but as a sidekick for your favorite weeknight dinners on busy weekdays all Winter!
Traditional holiday ingredients
The ingredients you need for this simple salad are simple, colorful, vibrant, and highly nutritious. They are also the ingredients we often associate with the Fall and Winter holidays, such as Thanksgiving, Christmas, and New Year's Eve.
- Pecans are packed with fiber and are rich in many nutrients. This includes zinc and Vitamin B1. These delicious nuts add crunch and texture to any Christmas salad. I like to lightly toast them in the preheated oven at 350 F for about 10 minutes.
- Dried cranberries add sweetness. I used Craisins. You can briefly soak dried cranberries in hot water to plump them up. You can also use dried figs, blueberries, or cherries.
- Spinach is packed with nutrients and antioxidants. It’s high in fiber and a good source of many vitamins and minerals. Spinach is a great source of vitamins A and C, as well as folic acid, iron, and calcium.
- Mandarine oranges are a small citrus tree fruit. They are often called mandarins and are part of the same family as oranges, limes, and lemons. They are packed with vitamins, minerals, and antioxidants. In particular, mandarins are a good source of beta-carotene, an antioxidant. They are also rich in Vitamin C. I used 3 mandarine oranges, peeled and segmented. You can also use canned mandarins (1 can or 15 oz).
- Pomegranate. Sprinkle the salad with the ultimate Autumn and Winter fruit, the pomegranate seeds (or arils). They add tangy and sweet flavor as well as create a beautiful presentation.
- Goat cheese. I used a soft kind that provided creaminess to the salad.
- Salad dressing ingredients include extra virgin olive oil, honey (or maple syrup), freshly squeezed lime juice (or lemon juice), and Dijon mustard.
How to make it ahead
Christmas time can be hectic enough and we tend to spend a lot of time in the kitchen during the holidays. It's always great to have that one recipe that you can make in advance so that you can spend more time with your family and friends. Here are some tips:
- Prep some ingredients. Segment mandarin oranges. Remove pomegranate arils from the shell. Toast the pecans. Keep these ingredients separate (in small sandwich bags).
- Prepare the salad dressing up to 3 days in advance and store it refrigerated in a glass mason jar.
- The assembly should take only 10 minutes right before serving for the best results and freshness.
- Tip: don't add the pecans, goat cheese, and salad dressing until right before serving to keep the salad fresh and to prevent the nuts from getting soggy.
Variations, substitutions, and helpful tips
What I love the best about this Christmas salad is that it's versatile and flexible. You can use a wide range of ingredients and adjust them to what you have available.
- Greens. Use your favorite greens with this salad - spinach, arugula, mixed greens, garden greens, and lettuce.
- Nuts. I recommend using pecans, cashews, walnuts, or pine nuts. Toast the nuts briefly in the oven to make them crunchy. If you don't want to use nuts, you can add toasted sunflower seeds or pumpkin seeds.
- Dried fruit. I used dried cranberries, you can also use dried figs, blueberries, or cherries.
- Small oranges. You can use fresh mandarins, tangerines, or clementines. I used 3 mandarine oranges, segmented. You can also use canned mandarins (1 can or 15 oz).
- Buy pomegranate arils in a container at a grocery store. This will save you time and you will not have to remove the seeds from a whole pomegranate.
- Cheese. Goat cheese can be replaced with Feta or Gorgonzola.
- Salad dressing. This recipe uses honey, mustard, olive oil, and lime juice. You can also use maple syrup and lemon juice.
How to serve it
This festive spinach salad with pecans, mandarins, pomegranate, and goat cheese pairs well with any holiday main course for Christmas. It's a great sidekick for the holiday ham, prime rib, beef tenderloin, turkey , and other favorite holiday main dishes. This Christmas salad will also pair well with a meatless holiday main course, such as these 2 recipes:

Ingredients
Salad dressing.
- ⅓ cup extra virgin olive oil
- 3 tablespoons Dijon mustard
- 3 tablespoons honey
- 1 large lime juice freshly squeezed
Salad ingredients
- 6 oz baby spinach
- 1 cup pecan halves toasted, some of them chopped finely
- ½ cup dried cranberries
- 3 mandarin oranges peeled and segmented
- ⅓ cup goat cheese crumbled
- ⅓ cup pomegranate arils or more
Instructions
Make salad dressing.
- Combine all salad dressing ingredients in a mason jar. Whisk well with a fork, until emulsified. Add more lime juice to taste.
- I prefer to arrange the salad in individual bowls for presentation purposes.
- Add spinach to each individual salad bowl. Top with the remaining salad ingredients.
- Drizzle with the salad dressing.
- Alternatively , you can combine all the salad ingredients (except pecans and pomegranate arils) in a large serving bowl, add the dressing, and toss to combine. Then, top the salad with toasted pecan halves (some of them chopped) and pomegranate arils.

I made this salad for our High School lunch group's Christmas party, we graduated high school in 1960, so you know we are a bunch of opinionated old biddies. LOL This was the hit of the day, the dressing is wonderful. I changed nothing in your recipe as I think you know best and I would never say "Oh it would be better with XXX added to it. I made dressing, and just as a suggestion - it would make it easier/more accurate if you specified volume of the lime juice - vs juice of a lime- as ime size varies and if youre changing # servings, its easier to scale. For example, I was to use >83 large lime according to recipe, for 5 servings.

Hi, this recipe is beautiful. I found the dressing a bit too oily and mustardy so added a tablespoon of orange juice and a shake of pepper to balance, created very nice combo. Used Chavrie cheese which is mild.

My readers have been asking me for more Christmas recipes , and even though I don’t personally celebrate it, I had a great time creating this stunning Christmas salad recipe for all of you that do. I love serving it for other fall and winter occasions, too! This easy holiday salad has so many vibrant colors and flavors, plus it’s so easy to whip up in just 10 minutes.

This section explains how to choose the best Christmas salad ingredients, what each one does in the recipe, and substitution options. For measurements, see the recipe card below .
Christmas Salad:
- Arugula – I used arugula for the greens to add a peppery kick, but you can easily swap it for spinach or mixed greens for a different flavor and texture.
- Fruit – This Christmas salad has a combination of mandarin oranges (use extras for mandarin orange salad ), apple slices, and pomegranate arils (seeds). You can also add or substitute apple chips , pears, dried cranberries , or other sweet citrus fruits (like grapefruit, clementines, or regular oranges) for similar festive flavors.
- Blue Cheese – The salty, pungent flavor is perfect for balancing out all the sweet fruit, but if you’re not a fan, tangy feta cheese or goat cheese make nice alternatives.
- Pecans – For crunch! You can also use walnuts or pistachios, or substitute pepitas or sunflower seeds for a nut-free option.
Honey Vinaigrette:
- Olive Oil – This makes up the base of the dressing. You could use avocado oil instead.
- Apple Cider Vinegar – Adds tang and also blends with the olive oil to emulsify the dressing. White wine vinegar, white balsamic vinegar, or lemon juice can also work.
- Honey – I use Wholesome Yum natural sugar-free honey (sweet and gooey with no aftertaste!), but regular also works.
- Sea Salt & Black Pepper

- Assemble the salad. In a large bowl or on a platter, arrange the arugula, mandarin oranges, apples, blue cheese, pomegranate seeds, and pecans.
- Make honey vinaigrette. Whisk together the olive oil, apple cider vinegar, honey, sea salt, and black pepper.
- Toss together. Drizzle the vinaigrette over the Christmas salad, and toss to coat.
Store any leftovers in an airtight container in the refrigerator for up to 1 day with the dressing, or 2-3 days if you store the dressing separately.
Serve this show-stopping Christmas salad with a complete holiday menu:
- Appetizers – If you’re cooking up the whole feast, a simple Christmas charcuterie board makes a quick and easy appetizer, but you can’t go wrong with a cheese ball or some bacon wrapped water chestnuts .
- Main Course – Serve this festive salad alongside a centerpiece like roasted turkey breast , juicy prime rib roast , broiled lobster tails , deliciously poached lobster , or crab legs .
- Classic Holiday Sides – Make creamy mashed potatoes (or lighter mashed cauliflower ), elegant green beans almondine , and classic creamed spinach .

- 1 large Apple (sliced thinly) ▢
- 1/2 cup Blue cheese (crumbled; or goat cheese or feta cheese) ▢
- 1/3 cup Pomegranate seeds ▢
- 1/4 cup Pecans (chopped or halved) ▢
- 6 tbsp Olive oil ▢
- 2 tbsp Apple cider vinegar (or white wine vinegar, white balsamic vinegar, or lemon juice) ▢
- 1 1/2 tbsp Honey (or natural sugar-free honey ) ▢
- 1/8 tsp Sea salt (to taste) ▢
- 1/8 tsp Black pepper (to taste) ▢
Instructions

In a large bowl or on a platter, arrange the arugula, mandarin oranges, apples, blue cheese, pomegranate seeds, and pecans.
In a small bowl, whisk together the olive oil, apple cider vinegar, honey, sea salt and black pepper. Whisk to combine.
Drizzle the vinaigrette over the Christmas salad. Toss to coat.

1. jean-georges vongerichten's shrimp salad.
For a light starter to any meal, try the acclaimed chef’s steamed shrimp salad with two dressings. We love this salad for its simplicity - just fresh shrimps and mixed greens come together with two different types of luxurious sauces.
- Start by peeling and deveining the shrimp then split them in two, keeping the tails attached.
- Place on a buttered dish, season and grill for about 1 and a half to 2 minutes.
- Plate up with seasonal salad greens, sliced avocado, enoki mushrooms and diced tomatoes.
- Drizzle with the first dressing (1 part soy sauce, 1 part lemon juice, 1 part truffle juice and 3 parts olive oil).
- Add chopped chives then the second dressing, a reduction of shallots, Champagne vinegar, cream and butter.
2. Gordon Ramsay’s spicy beef salad
Gordon Ramsay's salad recipe makes use of a great piece of beef and turns it into an Asian-inspired salad full of fresh cherry tomatoes, mixed greens, and herbs. The salad dressing is bright and spicy, made with fiery red chilies, fish sauce, lime juice, and mint. The entire salad is topped off with toasted peanuts.
- Start by seasoning the steak generously and sear in a hot pan with olive oil. Turn once and cook for 2 and a half minutes on each side. Allow to rest.
- Make the spicy dressing: deseed a chilli and chop, crush in a pestle and mortar with a peeled garlic clove and salt. Add two teaspoons of palm sugar, fish sauce and fresh lime. Mix until the sugar dissolves.
- Prepare the vegetables and coat in the dressing.
- Plate up with the sliced, rested steak. Top with crushed, toasted peanuts.
3. Daniel Boulud’s favourite salad recipes
Chef Daniel Boulud creates two super easy summer salads - one with a medley of tomatoes, another with peaches and Parmesan cheese. If you're used to making tomato caprese salad, try the starred-chef's version with labneh instead.
Labneh, a Middle Eastern fresh cheese, is easily made at home - simply wrap a cheesecloth over some greek yoghurt and hang over a bowl in the fridge overnight. The result will be a fresh cheese with a cream cheese-like consistency that can take on any flavour you wish in a dish.
- For the tomato salad: cut heirloom and cherry tomatoes into wedges and season. Make a dressing with tomato water, lemon juice, garlic, honey, sumac, olive oil, salt and pepper. Plate up with drained labneh, sliced avocado and shallots before garnishing with basil and a pinch of sumac.
- For the second summery salad: use a leafy green base with herbs and add flaked pecorino cheese to cooked quinoa and sliced peach. Sprinkle with toasted almonds and chopped black olives. Drizzle with a Champagne vinaigrette or balsamic dressing.
2 Caesar salads: Thomas Keller vs Massimo Bottura
4. Thomas Keller Caesar salad
If you are after a good old caesar, Thomas Keller's salad is where it’s at. In this video for the New York Times , the chef goes through each and every element of this American classic, from what olive oil to use, why you use anchovies in the dressing, to what type of salt you should be sprinkling on your salads. This is the guide to help you make the best Caesar salad of your life.
- Make the anchovy paste.
- Grate the parmesan cheese onto a baking sheet to make a parmesan crisp.
- Add a garlic clove and coarse salt to the anchovy paste to perfume the bowl with garlic.
- Add a raw egg and blend until it coats the back of the spoon. Gradually add olive oil to emulsify.
- Add the torn salad leaves to the emulsified dressing and another pinch of salt. Grind black pepper over the top and squeeze lemon juice.
- Grate more fresh parmesan into the bowl and add broken pieces of the parmesan crisp. Toss all the ingredients together.
- Plate up and garnish with more grated parmesan and single brown anchovies.
5. Massimo Bottura’s Caesar salad
Called Modena to Dubai, Bottura’s salad shares a few elements in common with the Caesar salad, but is something entirely new that only Bottura can create. Ingredients like Parmesan cheese mingle with balsamic vinegar from Bottura’s hometown of Modena, as well as ingredients unique to the Middle East.
While we don't recommend it, you may (if you absolutely must) substitute the balsamic vinegar with red wine vinegar if you can't find it, and go for a good mix of baby greens and edible flowers for visual effect.
- Arrange the base leaves and herbs delicately. Grate a boiled egg yolk before adding dots of extra virgin olive oil and caesar salad sauce.
- Drizzle in balsamic vinegar and dot with lemon gel.
- Add thin slices of crunchy bread and parmesan crisps to garnish.
6. Enrico Crippa’s 21-31-41 salad recipe
This is one of Crippa’s most famous recipes, partly because it uses a whopping 40+ ingredients for a salad that is kept entirely raw. His process of picking all the ingredients, such as succulents, greens, roots, and flowers from his two gardens makes for fascinating viewing, and the resulting salad is a symphony of raw flavours.
You won't find any feta cheese or red onions here. Rather, the entire dish is about tasting the incredible diversity in flavours and textures of greens - some familiar, some not so much. Use it as a guide to creating your own composition of fresh vegetables.
- Prepare the fresh salad leaves and herbs.
- Assemble the dish by combining the leaves, add a pinch of salt, sesame needs and nori seaweed.
- Add candied ginger water, julienned pieces of candied ginger, some drops of Barolo wine vinegar and extra virgin olive oil. Stir together carefully.
- Add aromatic herbs and assemble. Top with hazelnuts.
- Garnish with edible flowers to add colour.
