If you like java, blue skies are ahead. JavaBlue is a branded coffee bar onboard Carnival Cruise Line , serving up specialty coffees, hot chocolate and iced lattes. For a little extra, spiked coffees (coffee or cappuccino with a dash of liqueur) can add an extra boost to your afternoon or evening.

JavaBlue is a casual place to grab a refreshment. An ocean-colored tile backdrop suits the name, as does blue seats and a blue ceiling (on Carnival Sunshine anyway). The cafe is immediately to the right of the same pearly white counter that serves Shake Spot, a venue that specializes in shakes.

There are a few high-top tables to sip your drink on the spot and people-watch along the promenade -- otherwise, there isn't much atmosphere here.

Regular coffee, espresso drinks, tea and hot chocolate are on the menu. Espresso drinks can also be served iced. The real draw here is a handful of spiked coffees featuring alcohol-infused java. A Caribbean Coffee is coffee infused with Tia Maria (a dark liqueur made using Jamaican coffee beans) and Appleton rum, with a sprinkle of nutmeg. Hazelnut Heaven is a cappuccino with Frangelico (a hazelnut liqueur) and a splash of Absolut Vanilla vodka.

Bottled beverages like Perrier, water, iced tea and energy drinks are also available at JavaBlue. Merchandise like mugs and tumblers are for sale.

Beverages at JavaBlue are priced a la carte, and range from 95 cents for a drip coffee to $5.95 for a spiked coffee.

Carnival "FUN SHIP" recipe

Carnival "THE FUN SHIP" recipe of the DOD (drink of the day) on the first day of your sailing:1oz Amaretto Almond Liqueur

  • 1/2oz Pineapple Juice
  • 1/2oz Orange Juice
  • 1/2oz Lime Juice
  • 1/4oz Apricot Brandy
  • 1 splash grenadine syrup
  • (variation) - "Apricot Brandy, Light Rum, Amaretto, Almond Liqueur, Mango Liqueur, Grenadine Syrup, Orange Juice, Pineapple Juice".

Carnival "MARDI GRAS" recipe

  • 0,1oz lemon juice
  • 2oz dark rum
  • 6oz Hawaiian Punch
  • 1tsp sugar.
  • The hurricane glass preparation - dip the rim first in lemon juice, then in sugar. The drink itself - shake well with lots of ice, garnish with an orange slice. Enjoy it by thinking of the Fat Carnival Fun, and not necessarily on Thursday.

  • 1 1/4oz coconut rum
  • 3oz orange juice
  • 2oz pineapple juice
  • cocktail shaker half-filled with ice cubes, strain into a highball glass filled with ice cubes.

"CARNIVAL COSMO" recipe

  • 1 3/4oz 42 Below PassionFruit Vodka
  • 3/4oz Triple Sec /orange-flavored liqueur/
  • 1oz Cranberry Juice, Lime Juice, Cotton Candy, Cherry
  • "mix in a cocktail shaker with crushed ice, strain into a cocktail glass".

"Tropical Lifesaver" recipe

  • 1/2oz Bacardi Select Rum
  • 1/2oz Bacardi Light Rum
  • 1/4oz Vodka Finlandia
  • 1/4oz DeKuyper-Banana Liqueur
  • 1/4oz coconut cream
  • 1 1/2oz pineapple juice
  • 1 1/2oz orange juice
  • dash grenadine, ice.

  • 1/2oz Sauza Tequila

  • 1oz Creme de Banana (DeKuyper)
  • 1oz Creme de Cacao (DeKuyper)
  • 1oz Kahlua (coffee-flavored liqueur)
  • 2scoops vanilla icecream.

"Agave Pineapple Tea" recipe

  • 1/2oz Milagro Tequila
  • 1/2oz Vodka
  • 1/2oz Light Rum
  • 1oz Lemonade
  • Mix together, pour over ice, top with a splash of soda, garnish with a pineapple slice.

  • 5oz Bacardi 151
  • 1 pckg Frozen Pina Colada Mix
  • 1 pckg Frozen Daiquiri Mix
  • Mix the pina colada with 2,5oz rum & ice, mix the daiquiri with 2,5oz rum/ice, add the pina colada to a cocktail glass, then add the daiquiri on top.

"Peach Pleasures" recipe

  • 1oz DeKuyper /Peachtree Schnapps/
  • 1/2oz DeKuyper /Sloe Gin/
  • ice, float the grenadine, garnish with a cherry.

Carnival "Kiss on the Lips" recipe

  • 1 or 1 1/2oz Peach Schnapps
  • 4-6oz mango puree
  • 1 tbsp grenadine syrup
  • Mix schnapps/mango/ice, add grenadine, pour in a highball glass filled with ice, garnish with pineapple slice/cherry.

Carnival "Cosmopolitan" recipe

  • 1 3/4oz Passion Fruit Vodka
  • 3/4oz Triple Sec (orange-flavored liqueur)
  • 1oz Cranberry Juice
  • 1oz Lime Juice
  • Cotton Candy
  • Blend all but the cotton candy/cherry, put cotton candy in a martini glass (cherry on top), pour the ingredients over the top.

Carnival "Beachcomber" recipe

  • 1 1/4oz Smirnoff Vodka
  • 1/4oz Captain Morgan coconut rum
  • 1/2oz pineapple juice
  • 1/4oz orange juice
  • 1slice orange
  • blend all, shake with ice, serve in an ice-filled glass, garnish with an orange slice.

  • mix the pina colada with 2,5oz rum and ice, then set aside. Mix the mango with 2,5oz rum and ice; while frozen, add the pina colada mix into a cocktail glass, then the mango on top, (separated), and garnish with cherry and pineapple wedge; serve with a straw.

OK, just got back week before last from a very enjoyable Valor cruise. I found a "new" favorite drink! It was a difficult job...had to test quite a few to find it:D

Now, I checked my Carnival Bar recipe book & it is not in there:( Does anyone have a more current Carnival Bar recipe book or a good recipe for this wonderful concoction?

The Dirty Banana, as it is made in Jamaica, is equal parts of gold rum, Tia Maria (Jamaican Blue Mountain Coffee Liquor), Rum Cream (cruise ships substitute Baileys and it is not the same), a splash of simple syrup, some milk and a banana. Blend it all together and drink! The best Dirty Banana ever had was made by a bartender at Hedonism II in Negril, Jamaica named Delroy!

I asked a Jamaican bartender on an Alaskan cruise a few years if he could make a Dirty Banana. His eyes lit up and said he didn't have the right ingredients but would improvise. He had been on the ship only 3 months but had worked at a place called Rick's Cafe in Negril and had not had anyone ask for one since he joined the cruise line. He worked it until he got the taste pretty darn close. Several people asked what it was and I let a few taste. He then let others taste from what was left in the blender. Before I walked away from the bar, he had 10 people lined up who wanted Dirty Bananas.

I love Rick's Cafe in Negril. It used to be alot better before commercialization took over but it still showcases the most beautiful sunsets! Plus the cliff diving is awesome there.

How to Make Authentic Jamaican Coffee at Home: The Easy Recipe

Jamaica is well-known for many things, including producing what is considered by many to be the world’s best coffee. If you haven’t heard of Jamaica Blue Mountain coffee before, we will remedy that here and discuss what’s so special about this coffee and the best ways to brew it.

We also give you a “fun” coffee recipe that includes Jamaican rum. But the truly authentic Jamaican coffee begins and ends with Blue Mountain coffee.

How to Make Jamaican Coffee:

  • Jamaica Blue Mountain coffee beans
  • Filtered water
  • Coffee grinder (conical burr recommended)
  • Kitchen scale
  • Thermometer
  • French press (or drip pot or percolator)
  • 1. Grind the beans.

The best grinder to use, particularly for special beans like these, is to use a conical burr grinder set to coarse (texture should be like kosher salt).

  • 2. Weigh the grounds.

Using these beans is an exact science. For making 8 ounces of coffee, measure the grounds on your kitchen scale at 1.1 ounces (just a little over 2 tablespoons).

  • 3. Boil the filtered water.

You can use tap water but filtered water is best. For this coffee, you should also check that it is at an ideal temperature. Boil the water until it is between 195°F and 205°F.

  • 4. Put the grounds in the French press.

While you’re waiting for the water to boil, place the grounds in your French press.

  • 5. Pour the water.

Once the water is at the right temperature, pour it into the French press, seal it, and set your timer for 4 minutes.

  • 6. Plunge and drink.

When your timer goes off, plunge, pour, and enjoy!

The Jamaican Coffee Experience

  • The Blue Mountain Beans

You should be prepared to pay quite a bit for an authentic Jamaica Blue Mountain coffee experience. The beans are grown in a certain area in Jamaica (in the Blue Mountains) and must specifically grow in Portland, St. Thomas, St. Andrew, and St. Mary.

They also must grow in altitudes over 3,000 feet and under 5,500 feet to qualify as Jamaica Blue Mountain. These altitudes, as well as the volcanic soil, are what make the beans among the best. When harvested, the beans are separated by hand, and the Jamaica Coffee Industry Board (JCIB) must approve them.

The JCIB inspects the beans before and after roasting and even does blind taste tests before awarding the Blue Mountain seal. If your beans don’t have the official seal, you’re not drinking real Jamaica Blue Mountain coffee.

  • Notes on the Preparation

We used a French press for the preparation, which is recommended as one of the best ways to prepare Jamaica Blue Mountain coffee beans, but you can use whatever you have on hand. The water should be at a precise temperature, though, and you’ll have more control with a French press, percolator, or drip pot than with a traditional coffee maker.

You should only grind the beans when you are going to use them. Otherwise, they should be stored in an airtight container in a cool, dark, and dry place. Do not put the beans in the fridge or freezer, as this can draw out the moisture from the beans faster.

If you don’t want to weigh the grounds on a scale route, you can use 2 level tablespoons of ground Jamaica Blue Mountain coffee for every 8-ounce serving.

The use of filtered water isn’t necessary but will help the coffee stand out on its own. Tap water can have a subtle flavor, and you don’t want anything standing in the way of your tastebuds when you’re brewing a cup of exceptional coffee,

Finally, Jamaica Blue Mountain coffee is offered in light, medium, dark, and French roasts, as well as Peaberry . You should pick whichever roast you already prefer, but light and medium roasts are recommended because the natural, subtle flavors will stand out more.

  • Alternate Jamaican Coffee Recipe

If you can’t get your hands on Jamaica Blue Mountain coffee beans but would like to try a boozy, dessert, Jamaican-inspired coffee, we have a recipe just for you.

Ingredients

  • ¾ ounces of dark Jamaican rum (Appleton’s rum is recommended)
  • ¾ ounce of coffee-flavored liqueur
  • 1 cup brewed coffee
  • 2 tablespoons of whipped cream

Instructions

Brew your coffee the way that you usually prefer, and add the rum and liqueur. Top it with a dollop of whipped cream, and you’re done!

Simple Jamaican Coffee Recipe

Ingredients  .

  • 8 ounces of filtered water

Instructions  

  • Start by grinding your coffee beans, but only the amount that you want to use. Your coffee beans should remain whole when not in use. Use a conical burr grinder and set it to coarse, which should be similar to kosher salt in texture.
  • Using your kitchen scale, measure out 1.1 ounces of ground coffee (which works out to just a little over 2 tablespoons).
  • Boil the filtered water, and then, using your thermometer, check that it reaches 195°F to 205°F.
  • While you’re waiting for the water to reach the right temperature, put the Jamaica Blue Mountain grounds in your French press or coffee maker.
  • Once the water has hit the perfect temperature, pour it into your French press, seal it, and set your timer for 4 minutes.
  • Once the timer goes off, plunge it, pour it into your favorite mug, and enjoy!

Don’t forget to look for the seal of certification that is only stamped on genuine Jamaica Blue Mountain coffee beans. While brewing this coffee might sound more complicated than throwing a pod and water into a modern-day coffeemaker, the effort and the extra price are worth it!

Soon Carnival Cruises will be sailing the Caribbean once again.  Carnival is set to resume 8 of it’s ships beginning August 1st, 2020 visiting the Eastern & Western Caribbean, as well as the Bahamas. Now is a great time to take advantage of early booking deals on Carnival Cruises 2021 and 2022 sailings.

One of the things Carnival is best known for are their amazing cocktails.  From Tiki, Rum & Tequila bars, to Pubs, a Brewhouse or Alchemy bar….there is something for everyone. 

Here are some popular Carnival Cruise Drink Recipes

RedFrog Rum Bar’s Red’s Rum Treasure

Ingredients:

  • 1.5 oz. Zacapa 23 Rum
  • 0.75 oz. Malibu Coconut Rum
  • 3.75 oz. Goya Pineapple Guava Juice
  • 0.25 oz. Vitality Lemonade Mix
  • 1 oz. Sprite

Directions: Pour all ingredients into a shaker, except the Malibu Coconut Rum and Sprite. Add ice, and shake vigorously. Pour into a pint glass, and add the Malibu Coconut Rum. Top off with Sprite. Garnish with a pineapple wedge.

Ingredients

  • 1 oz Your favorite tequila coffee liqueur
  • .75 oz Irish crème
  • Pour chilled tequila coffee liqueur into a shot glass. Carefully top it off with Irish crème, layering the shot so that it looks like a small glass of stout!
  • It doesn’t have to be exact, but for best results make sure to use a bit more tequila coffee liqueur than Irish crème.

We sailed on the Carnival Celebration in January, 2023. There are three totally unique bars on this ship and we wanted to capture as many of the drink offerings as we could from each of these bars: Bar 820, Golden Jubilee, and Latitudes Bar.

THE GOLDEN JUBILEE

Golden Jubilee is a throwback to Carnival’s history, with drinks that have been part of the cruise line since its inception in 1972. As part of the Gateway section of the ship, there are many Easter eggs throughout this space that pay homage to all of the ships that have sailed in the fleet.

The Great Caribbean Cocktail Trail Challenge

I’m curious, how many of you have ever had the urge to spin the globe, plop your index finger down onto the rotating sphere, and travel to whatever spot is underneath your finger tip? While you can’t see it, our hands are both held up high!

At the moment, we’re having a difficult time choosing between two Caribbean cruises with Carnival Cruise Lines. One route goes to the west –Jamaica, Cozumel, Belize and Grand Cayman–and the other sails to the south with ports of call in St. Thomas, St. Kitts, St. Lucia, St. Marten and Barbados. In term of cost, duration, departure dates and days at sea, both cruises are nearly identical. Additionally, each has islands that are high on our list of places to see.

So, in keeping with the spontaneity of a Spin the Globe-style trip, we have decided to create a cocktail trail, if you will, of popular local drinks from each route and let our taste buds help guide us.

Island: St. Thomas (South Caribbean)

Origins: Legend has it that the Bushwacker was created by a bartender at Bolongo Bay Resort in St. Thomas.

Ingredients:

  • 2 oz. cream of coconut
  • 1 oz. coffee liqueur
  • 1 ½ oz. dark rum
  • ½ oz. dark creme de cacao

How to prepare:

Combine all ingredients in a blender along with 2 cups of ice. Blend until smooth, and then serve in a tall glass.

Jalousie Plantation’s Watermelon Delight

Island: St. Lucia (Southern Caribbean)

Origins: A signature cocktail from Jalousie Plantation on St. Lucia.

  • 2 oz. Chairman’s Reserve rum
  • 2 oz. Perrier or club soda
  • 1 tsp. brown sugar
  • ½ oz.  lime juice
  • Mint leaves
  • Cubed watermelon

Muddle the mint leaves and lime juice in a glass, add brown sugar then ice. Next, add watermelon cubes, then mix in the rum and soda and serve with a garnish of mint or lime.

Planters punch

Island: Jamaica (Western Caribbean)

Origins: It should be no surprise to anyone that a rum punch was conceived on a huge rum producing island, such as Jamaica. What may surprise you, though, is that the first recorded documentation of recipe dates back to September 1878 when the London magazine  Fun  ran instructions, in verse, for making “Planter’s Punch! A West Indian Recipe:”  

A wineglass with lemon juice fill, of sugar the same glass fill twice

Then rub them together until

The mixture looks smooth, soft, and nice.

Of rum then three wine glasses add,

And four of cold water please take. A Drink then you’ll have that’s not bad —

At least, so they say in Jamaica.

For our cocktail, we used Trader Vic’s classic recipe from 1947.

  • 3 oz. dark rum
  • 1 oz. lime juice
  • ½ oz. lemon juice
  • ½ oz. grenadine
  • ¼ tsp. superfine sugar

Stir well with ice, then strain into a Collins glass filled with ice. Garnish any way you see fit and stick a straw in it for good measure.

Cayman Lemonade

Island: Grand Cayman (West Caribbean)  

Origins: Calico Jacks on Grand Cayman

  • 1 oz. vodka
  • 1 oz. triple sec
  • 1 oz. peach schnapps
  • Cranberry juice
  • Club soda or seltzer

First, mix the vodka, triple sec and peach schnapps in a shaker. Pour mixture over ice, add a squeeze of lemon and a splash of cranberry juice and soda, stir and enjoy.

While all of the cocktails were tasty, two of them really hit on all the right notes; Planters Punch and Bushwacker were our two favorites. Since both are from opposite routes, we mixed up another round of each to determine the winner. When the glasses emptied it was Planters Punch that we kept talking about…so…Jamaica and the Western Caribbean in November it is!

Ingredients

  • 6 ounces of dark rum
  • 2 ounces of lime juice
  • 2 ounces of pineapple juice
  • 2 ounces of coconut milk
  • 2 ounces of ginger beer
  • 2 tablespoons of brown sugar
  • 1 lime, cut into wedges
  • Crushed ice

Instructions

  • Let’s get started making this Caribbean Mule! First, grab 6 ounces of dark rum and pour it into a shaker.
  • Squeeze 2 ounces of lime juice into the shaker, followed by 2 ounces of pineapple juice, 2 ounces of coconut milk, and 2 ounces of ginger beer.
  • Add 2 tablespoons of brown sugar and shake the shaker for about a minute.
  • Fill a copper mug with crushed ice and pour the contents of the shaker into the mug.
  • Garnish with a lime wedge and enjoy!
  • It only takes 5 minutes to make this delicious Caribbean Mule – so let’s get started!

In April, as spring emerges, festival season also kicks off, bringing a plethora of top music and culture festivals to enjoy. From Coachella to the New Orleans Jazz Festival, the opportunities for outdoor gatherings seem endless. However, if you’re seeking an international festival experience, look no further than Jamaica Carnival.

Held in Kingston from the first to the second week of April, Jamaica Carnival remains a top cultural extravaganza attracting revelers worldwide. Featuring vibrant breakfast parties, night fetes, dawn j’ouverts, and midday road marches, it’s an annual event that continues to evolve. To navigate the plethora of activities, we’ve compiled a comprehensive Jamaica Carnival guide.

During your time in Jamaica, it’s crucial to make the most of your experience. “I would tell anybody coming to take advantage of Jamaica,” says Kibwe McGann, director of GenXs, an in-demand carnival band renowned for hosting extravagant events. GenXs curates the unforgettable road march experience on April 7, offering carnival attendees costumes, meals, beverages, entertainment, and security. Additionally, GenXs organizes an “Immortals J’ouvert” early on Saturday, April 6, as well as “XS Street,” a post-carnival road march party. Other events hosted by GenXs include “Ocean X,” the Catamaran beach fete, and “XS Sunset,“ the finale carnival fete on Monday, April 8.

“For those coming to Jamaica for carnival in Kingston, our capital city is also known as the cultural capital of the Caribbean, and for good reason,” explains Donovan White, Jamaica’s director of tourism. “Visitors can check out Devon House, which was the home of Jamaica’s first Black millionaire. Our popular Devon House I-Scream serves exotic flavors such as Devon Stout and Guava ice cream along with others. For Easter, they have created a new flavor — Bun and Cheese. Check out the street art murals by local artists along the Art Walk downtown, stop by the Bob Marley Museum to get a glimpse into the life of the legendary reggae singer in his well-preserved home, and be sure to try some of our world-famous jerk,” White adds. 

Keeping that in mind, it’s important to understand that Jamaica Carnival stands out from other carnivals due to its focus on cultural elements authentic to the region; especially its legendary music.

“Take a minute and understand why we say this is one of the ’Irie-est’ carnivals in the world— emphasis on ‘Irie,’” says McGann, referencing the fact that alongside the season’s top soca hits, Jamaica’s primary musical exports, reggae and dancehall, are also prominently featured. 

“Be open to new music because this is in Jamaica; we’re the originators of dancehall, and you’re gonna get dancehall on the road. So if you’re a soca purist, you may come to Jamaica and be like, ‘How come they’re playing dancehall?’ I want people to come and be very open to embracing the culture,” McGann continues. 

If you’re considering joining this carnival extravaganza, note that Jamaica has been categorized as “Level 3: Reconsider Travel,” by the U.S. State Department since 2022. However, it’s important to recognize that while the advisory mainly addresses local crime, the rate of crime against visitors to Jamaica remains exceptionally low at 0.01%, according to NPR . Should you make the trip, the most convenient airport to fly into is the Norman Manley International Airport in Kingston. There are several excellent and accessible hotels available, including The Courtleigh , The Pegasus , AC Hotel by Marriott , Rok Hotel , Spanish Court , and The R Hotel . Wednesday, April 3

Illuminate : In Jamaica, soca season runs from February to April, culminating in major carnival events on the second weekend of April, often following Easter weekend. Festivities typically start on Friday evening, but arriving a few days earlier offers a lineup of fetes to get you in the spirit. 

Traditionally, Wednesday was the day for the renowned “iLoveSoca” stadium fete; it’s now moved to Monday, April 1. However, this year’s “Illuminate” party is set for Wednesday, April 3, at 8 p.m. “We have always had the idea for Illuminate and saw the opportunity to introduce it last year on Carnival Wednesday, and it was well received,” explained Andrew Bellamy, director of the YardMas carnival band and iLoveSoca, which worked in partnership with Franco and Brush1 to create Illuminate. “It was a very high-energy event with thousands of people for the first staging, so for 2024, we’re doing it again!”

Thursday, April 4

Touchdown Jamaica : An exciting and fashion-forward affair, Touchdown Jamaica embodies the quintessential soca experience of the weekend, held at Jangas, Kingston’s renowned soundbar and grill, starting at 6 p.m.

Rytz featuring Kes : The iLoveSoca and Tipsy Music Festival teams collaborate to present Rytz , an exclusive all-inclusive luxury glamour party with a live performance by one of soca’s biggest artists, Kes. Join in from 8 p.m. to 1 a.m.

Friday, April 5

SunKissed All-Inclusive Beach Cruise Party : The Sunkissed All-Inclusive Beach Cruise Party is hailed as one of the premier beach fetes and catamaran cruise events during the season. Delight in the finest soca beats from noon to 5 p.m. while cruising on the water.

Soca Starter : Renowned DJ Private Ryan releases his soca starter playlist at the start of each year, offering insight into the major tunes he predicts will dominate international carnival celebrations. Accordingly, you won’t want to miss his annual “ Soca Starter” party from 3 p.m. to 11 p.m.

Scorch Duck Work : Scorch Duck Work is a celebrated cooler fete that has made its mark in Trinidad, Barbados, and Jamaica. Join the Scorch team on Carnival Friday, April 5, from 5 p.m. to 1 a.m. to experience the sizzling Jamaican vibes.

Bacchanal J’ouvert — Paint Rave : One of the original j’ouverts, Bacchanal J’ouvert — Paint Rave , is a vibrant paint party held at Mas Camp in Kingston, starting at 10 p.m. and continuing until morning.

Saturday, April 6

Immortals J’ouvert : GenXs, the leading “ultra-premium” carnival band, continues to dominate soca season with exceptional events, including Immortals J’ouvert. Starting early Saturday at 2 a.m., this breakfast-inclusive event promises an unforgettable experience filled with paint, powder, water, and the finest soca tunes. Don’t miss out on this epic celebration!

Sunnation Breakfast Party : If you had to choose only one event to attend for Jamaica carnival season, it should be none other than the famous all-inclusive Sunnation Sunrise Breakfast Party . Coveted for its elegance, wide array of food options, top-notch performances, and infectious atmosphere, this breakfast party draws attendees bright and early on Saturday, starting as early as 5 a.m., to revel with friends throughout the day. 

Lil Strut Jamaica : When you hear of Lil Strut Jamaica , imagine boats, bubbles, and bacchanal! As the final GenXs-approved official boat cruise before masqueraders hit the road to jump on carnival Sunday, consider this an essential cruise event from 4 p.m. to 8 p.m.

XS Sunset : The final GenXs event of the week is XS Sunset, a cooler cool-down fete, free for GenXs Masqueraders.
