Red Hot Chili Peppers Tap St. Vincent, the Strokes, King Princess for Extensive 2023 World Tour

Red Hot Chili Peppers have scheduled an extensive 23-date world tour for 2023 in support of their latest studio albums, Unlimited Love and Return of the Dream Canteen. Throughout their trek through North America and Europe, the band will be joined by St. Vincent, the Strokes, King Princess, Iggy Pop, the Roots, the Mars Volta, and City and Colour on select dates.
The 2023 tour will launch on March 29 at Vancouver’s BC Palace and wrap on July 23 in Glasgow’s Hampden Park. A number of stops — including performances in Alabama, Odense, Landgraaf, Milan, Lisbon, and Madrid — double as festival appearances. Red Hot Chili Peppers will perform headlining shows at stadiums in Las Vegas, San Diego, Phoenix, Houston, Vienna, London, and more.
General sale for both the North American and European leg of the tour begins Friday, Dec. 9 at 10 a.m. local time via the official Red Hot Chili Peppers website.

Today, acclaimed rock band Red Hot Chili Peppers announced their 2023 Tour , in support of their two #1 studio albums that were released in 2022, Unlimited Love and Return of the Dream Canteen. Following a recent Grammy nomination for Best Rock Song for “Black Summer,” the band will embark on a 23-date global trek that kicks off on Wednesday, March 29th at BC Place in Vancouver, BC with stadium shows and festival stops across North America and Europe in Las Vegas, San Diego, Houston, Lisbon, Madrid, Vienna and more before wrapping up on Saturday, July 23rd in Glasgow, UK at Hampden Park. The Strokes, Iggy Pop, The Roots, The Mars Volta, St. Vincent, City and Colour, Thundercat, and King Princess will join the band on select dates.
The Red Hot Chili Peppers 2023 Tour comes close on the heels of the band’s largest 40-date stadium tour to date, which included massive sold-out shows in London, Paris, Los Angeles, and more. Notable artists such as A$AP Rocky, Anderson .Paak, Beck, HAIM and more joined the band on the road through 2022. After completing the wildly successful tour across North America and Europe this year, Red Hot Chili Peppers continue into January 2023 with 8 dates across New Zealand and Australia, featuring Post Malone.

Please note, the Red Hot Chili Peppers show originally scheduled for Summer 2022 in Glasgow, UK will now take place on Sunday, July 23, 2023 at Hampden Park Stadium. Existing tickets remain valid, but will be re-issued for the new date. Limited tickets remain and will be available during the general on sale.
As a result of the two album releases this year going #1, Red Hot Chili Peppers notably stand out as the first rock band in 17 years to achieve the feat. Moreover, Return of the Dream Canteen bowed at #1 on the Billboard Top Album Sales Chart —just like its predecessor Unlimited Love did back in April. Both albums were produced by longtime collaborator and creative confidant, Rick Rubin. Plus, it reached #1 in numerous countries around the globe.
The Red Hot Chili Peppers recently took home the prestigious Global Icon Award, and delivered a show stopping performance at the MTV VMAs. Their No. 1 single “Black Summer” also won the award for Best Rock Video. This year, the band also garnered an MTV Europe Music Award nomination for Best Rock and scored three American Music Awards nominations for “Favorite Rock Artist,” “Favorite Rock Album” for Unlimited Love and “Favorite Rock Single” for “Black Summer.”

American rock icons Red Hot Chili Peppers are returning to New Zealand, Australia and Asia real soon – here’s what their setlists at their highly anticipated shows could look like.

Anthony Kiedis and co. will kick off their tour in Auckland on Saturday (January 21) before moving on to Dunedin on January 28 and Brisbane the following day. The quartet will then perform in Sydney, Melbourne and Perth to wrap up their Australia and New Zealand leg of the tour before taking on Singapore – their only gig in Southeast Asia – and then two dates in Japan.
These are not-to-be-missed shows for Chili Peppers fans: Besides being the first shows in the region to feature fan-favourite guitarist John Frusciante since his initial exit from the band in 2009, fans will also bear witness to live performances of several new songs from the Peppers’ two 2022 albums. ( Post Malone tagging along for the entire Australia and New Zealand run shouldn’t hurt, either.)
But what about the classics? What about rarities? Below, we break down what Australasia fans can expect given the band’s ever-changing setlist.
The classics
Based on setlists from Red Hot Chili Peppers’ most recent concerts, fans can expect to hear the band run the gamut of hits and classics like ‘Can’t Stop’ alongside ‘Dani California’, ‘Snow (Hey Oh)’, ‘Californication’, ‘Scar Tissue’, ‘Give It Away’, ‘Suck My Kiss’, ‘Right On Time’, ‘Me & My Friends’ and more.
The newbies
Following the 2022 release of their back-to-back albums ‘Unlimited Love’ and ‘Return of the Dream Canteen’ , fans can expect to hear some tracks from these records played at the upcoming shows. These could include ‘Return Of The Dream Canteen’’s ‘Tippa My Tongue’, ‘The Drummer’ and ‘Fake As Fuck’ – all of which were given their live debuts at the band’s most recent performance at iHeartRadio ALTer EGO on January 14.

Other tracks from ‘Unlimited Love’ that could be performed live, based on RHCP’s most recent concerts, include ‘The Heavy Wing’ and ‘Here Ever After’.
The rarities
While the Chili Peppers are known for hits like ‘Californication’, ‘Snow (Hey Oh)’ and ‘Can’t Stop’, the band are also celebrated for their rarities – the songs they play only once in a blue moon. Given the band’s discography that spans nearly four decades and a penchant for ever-changing setlists, gig-goers could potentially see a handful of rarities thrown around during the course of the tour. Some favourites fans would no doubt love to hear are ‘Under The Bridge’ (which was seemingly removed from their 2022 tour), ‘Higher Ground’ and ‘Get Up And Jump’, among a plethora of other songs that haven’t been played in ages.
The Frusciante specials
Frusciante’s return was announced in December 2019, but RHCP haven’t gotten the chance to tour extensively with him given the COVID-19 pandemic that broke out early 2020. Now that live music’s back in full swing across the globe and Frusciante’s properly back with the band, fans can expect to see him deliver some juicy solos and play some of his own key Chili Peppers compositions. Shoo-ins are ‘Under The Bridge’ and ‘Scar Tissue’, but other possibilities are ‘Magic Johnson’, ‘If You Have To Ask’, ‘Around The World’, ‘Universally Speaking’ and ‘Hump de Bump’.
Red Hot Chili Peppers also enjoy the occasional cover, recently performing the opening verse and chorus of Nirvana’s ‘Smells Like Teen Spirit’, their favourites of Stevie Wonder’s ‘Higher Ground’ and Loggins & Messina’s ‘Danny’s Song’ and The Ramones’ ‘I Remember You’. While the band have most recently only performed ‘Danny’s Song’, fans can probably expect ‘Higher Ground’ to be aired at some point, given that it’s the band’s most popular cover to date.

Red Hot Chili Peppers make a sizzling return to Singapore — gig report
If you are a seasoned fan of the Red Hot Chili Peppers , watching them perform in front of you is something that will never get old. And if you are a newcomer, it is an experience that nothing can prepare you for.
On 16 February , the American rock veterans — who last visited Singapore in 2019 to headline the Formula One Singapore Grand Prix — returned to the island city-state to unleash a sizzling chapter of their ongoing Global Stadium Tour .
Throughout the event at the Singapore National Stadium , verbal exchanges between the band and the crowd were sparse, but this by no means undermined the show's quality. As men of few words, Anthony Kiedis (vocals), Flea (bass), Chad Smith (drums), and John Frusciante (guitar) were more than glad to let their music do all of the talking.
BANDWAGON TV
Although they have been making music and performing for four decades, the Rock and Roll Hall of Fame inductees never showed any signs of slowing down during the concert, which ran for approximately an hour and forty minutes. Pulling out all the stops, the quartet delivered an evening of high-quality entertainment that thrilled the thousands in attendance.
In case you missed it or are looking for something to help you nurse your post-concert depression, here are four highlights from the Red Hot Chili Peppers' latest visit to Singapore.
RED-HOT CHEMISTRY
One thing fans were quickly reminded of was that listening to the studio versions of the band's music and watching their recorded performances simply do not compare to seeing them in the flesh. Instead of diving straight into the night's first number, the Red Hot Chili Peppers warmed the crowd up by giving it a taste of what it could expect from the show during an introductory jam. Not only did it serve as an opportunity for the members to showcase their individual musical prowess, but it was also a stunning display of the band's strong chemistry.
When the groovy basslines of Flea, the electrifying screams of Frusciante's guitar, and the rousing accents of Smith's drum fills came together, the result was an incredibly satisfying auditory experience. And when Kiedis finally took the stage for the opening song 'Fake as Fu@k' , he sent the band into full throttle with his speedy and lively line delivery. For those watching, the only thing that was to be done was marvel at the well-oiled unit before them.
OVERFLOWING ENERGY
Aside from being a display of their musical talents, the concert was also an exhibition of the Grammy -winning act's showmanship, a quality that they have also gained fame for.
"They don't need backup dancers or special effects. They're just four dudes who are good at what they do," a fan could be overheard saying.
As demonstrated by Flea's animated playing of the bass and Kiedis' uninhibited dancing and bouncing, there is plenty of truth to that statement. Constantly energising themselves as well as one another, the more the Red Hot Chili Peppers looked more and more like a self-sustaining machine with each track that they performed. Eventually spilling over into the crowd, their energy was so infectious that it even found its way to the seated sections located a distance away from the stage, where fans could be spotted getting up on their feet and dancing.
THE UNAGING HITS
There exist a number of timeless hits in the Red Hot Chili Peppers' extensive music catalogue and the audience in Singapore was treated to a selection of them. Taken off 2006's Stadium Arcadium , 'Dani California' was introduced just after the opening song. Moving further back in time, the Red Hot Chili Peppers later brought out 'Around the World' , ' By The Way' , and 'Give It Away' , which were released back in 1999, 2002, and 1991 respectively. Performing each of these tunes with a level of passion that has remained unchanged even after so many years, they delighted many.
But the loudest cheers of the night were reserved for 'Californication' , a song so recognisable that even non-fans would be familiar with it. Coming towards the end of the show, the track from the band's 1999 album of the same name was a crowd-pleaser that had fans putting their arms in the air and joining Kiedis as he sang its famous chorus.
THE SOON-TO-BE FAVOURITES
As the Red Hot Chili Peppers are known to have a setlist that changes with each show, there were big numbers, such as 'Can't Stop' , 'Snow (Hey Oh)' , and 'Scar Tissue' , that were not performed for the Singapore crowd. While the decision to omit them may have left some feeling disappointed, it was an understandable one since it freed up space for the band to include their newer material.
In Singapore, two new songs stood out. With the extremely catchy 'Aquatic Mouth Dance' , a track from 2022's Unlimited Love , the Red Hot Chili Peppers extended an invitation to fans to dive into the ocean and join them at a groovy underwater party. Later on, the Los Angeles-based outfit — while standing in front of a large screen playing a breathtaking video of the sun — presented a haunting live version of another track from Unlimited Love , 'Black Summer' . While they may not be as beloved as the band's biggest hits, they were additions to the setlist that showed that even after all these years, the Red Hot Chili Peppers still have plenty to offer.

Red Hot Chili Peppers announce 2023 world tour dates
Red Hot Chili Peppers share details of their 2023 global tour, with support from Iggy Pop, The Strokes, St. Vincent, and more
As they head into the new year with two new album releases under their belts - 2022's Unlimited Love and Return of the Dream Canteen - the Red Hot Chili Peppers appear to be set on making 2023 just as productive with the announcement of a 23- date world tour.
The trek will kick off on March 29 at BC Place in Vancouver, BC, and will see the Californian funk rockers' play stadium shows and festivals across North America and Europe.
They'll be making stops in Las Vegas, San Diego, Houston, Lisbon, Madrid, Vienna and more before signing off on the tour with a show at Glasgow's Hampden Park on July 23.
Supporting the band on the road for various dates are a long-list of special guests, including The Strokes , Iggy Pop , The Roots, The Mars Volta, St. Vincent, City and Colour, Thundercat, and King Princess.
Tickets go on sale on Friday, December 9 at 10am local time from Live Nation: those seeking to attend the UK dates should visit Ticketmaster .
On top of their two new albums, featuring newly-returned guitarist John Frusciante, the Red Hot Chili Peppers recently took home the Global Icon Award at the MTV VMAs. Black Summer also won the award for Best Rock Video, and they scored three American Music Awards nominations for Favourite Rock Artist, Favourite Rock Album for Unlimited Love and Favourite Rock Single for Black Summer.

Red Hot Chili Peppers have announced their 2023 tour in support of their two No.1 studio albums that were released in 2022, Unlimited Love and R eturn of the Dream Canteen .
Following a recent Grammy nomination for Best Rock Song for “Black Summer,” the band will embark on a 23-date global trek that kicks off on Wednesday, March 29 at BC Place in Vancouver, BC with stadium shows and festival stops across North America and Europe in Las Vegas, San Diego, Houston, Lisbon, Madrid, Vienna, and more before wrapping up on Saturday, July 23 in Glasgow, UK at Hampden Park. The Strokes, Iggy Pop, The Roots , The Mars Volta, St. Vincent , City and Colour, Thundercat, and King Princess will join the band on select dates.
The Red Hot Chili Peppers 2023 Tour comes close on the heels of the band’s largest 40-date stadium tour to date, which included massive sold-out shows in London, Paris, Los Angeles, and more. Notable artists such as A$AP Rocky, Anderson .Paak, Beck, HAIM and more joined the band on the road through 2022. After completing the wildly successful tour across North America and Europe this year, Red Hot Chili Peppers continue into January 2023 with eight dates across New Zealand and Australia featuring Post Malone .

Tickets go on sale starting Friday, December 9 at 10am local time at the Red Hot Chili Peppers’ official website.
The Red Hot Chili Peppers show originally scheduled for Summer 2022 in Glasgow, UK will now take place on Sunday, July 23, 2023 at Hampden Park Stadium. Existing tickets remain valid, but will be re-issued for the new date. Limited tickets remain and will be available during the general on sale.
As a result of the two album releases this year going No.1, Red Hot Chili Peppers notably stand out as the first rock band in 17 years to achieve the feat. Moreover, Return of the Dream Canteen bowed at No.1 on the Billboard Top Album Sales Chart–just like its predecessor Unlimited Love did back in April.

Red Hot Chili Peppers Announce New Zealand Tour For January 2023, As Global Stadium Tour Expands, With Post Malone
AUCKLAND, Monday July 4, 2022 – Legendary rock band Red Hot Chili Peppers have today announced their return to New Zealand for two massive stadium shows in early 2023. The band will perform in Auckland at Mt Smart Stadium on January 21 before heading South to Dunedin’s Forsyth Barr Stadium on January 26.
Red Hot Chili Peppers commenced their global stadium tour last month in Spain following the release of acclaimed new album Unlimited Love , with stops in London, Paris, Dublin, Los Angeles, Chicago, New York, and many more. The tour marks the return of guitarist and all-round cosmic musician John Frusciante to the group, as they perform their career-spanning hits alongside tracks from their new album.
Joining the New Zealand tour is multiplatinum selling superstar Post Malone . Red Hot Chili Peppers have enlisted a bevy of big-name support acts for a 2023 tour of North America and Europe. At dates kicking off in Vancouver next March, the North American shows will feature support from two artists apiece, selected from the Strokes , St. Vincent , the Mars Volta , Thundercat , and City and Colour. Iggy Pop and the Roots , meanwhile, will join the band at select European dates. King Princess is playing a handful of shows both sides of the Atlantic. Check out the dates below.
The dates include a Glasgow show originally scheduled for 2022, which will now take place next summer at the city’s Hampden Park Stadium. Red Hot Chili Peppers released a pair of albums this year: Unlimited Love and Return of the Dream Canteen . Red Hot Chili Peppers Announce 2023 North America Tour With Six Different Openers
Red Hot Chili Peppers had an outstanding 2022 releasing a pair of studio albums and they'll carry over that momentum to 2023, announcing a new batch of shows in both North America and the U.K. and Europe.
The group just added 23 more shows to their touring schedule, starting this spring with a March 29 performance in Vancouver and concluding May 25 in Houston. After that, they'll cross the pond for shows in June and July in Europe and the U.K.
In addition, it should be noted that a wide array of acts will be joining Red Hot Chili Peppers on the newly announced shows, with The Strokes , Iggy Pop , The Roots , The Mars Volta , St. Vincent , City and Colour, Thundercat and King Princess all appearing on select bills throughout the North American and U.K. and European run. It should also be noted that one of the shows in Glasgow that was scheduled for this past summer will now take place on July 23 at Hampden Park Stadium. Existing tickets will remain valid for the new date.
As for the newly announced shows, tickets will go on sale starting this Friday (Dec. 9) at 10AM local time via the Red Hot Chili Peppers website .

“Feel like such an idiot for smashing my bass to pieces on stage back in the day, pathetic,” Flea wrote on X Monday.
While it’s unclear if the message was intended to be tongue-in-cheek, fans of the rocker have responded earnestly to his post, urging him not to be hard on himself.
“We all have cringe moments from back in the day. Trust me … yours are much cooler man,” one wrote.
“Part of the growing up process,” another said, while a third added, “We all did a lot of dumb things, trying to be cool.”
A fourth wrote, “Don’t beat yourself up over it. It’s just what you thought rock stars need to do.”
Another fan told Flea how much she enjoyed when he threw his guitar around.
“If I may politely intervene, it was always awesome to see you do it – mostly because in order to SEE you do it we’d first get to watch you guys perform,” the fan wrote.
“I saw you live in Firefly 2013, it was pretty awesome to witness your guys’ intensity. It’s palpable how much passion you have.”
While Flea may carry personal sorrow over guitars he’s lost in the name of rock, fans who have managed to get their hands on remnants of his instruments are feeling pretty chuffed.
Over on Reddit , there are a number of threads featuring punters who have claimed they have pieces of his guitars.
“I have Flea’s main Modulus bass from 97-99 (smashed). It was his main bass he used from 97-99. It died at the 1999 KROQ weenie roast [California festival] following a stage trashing after then encore,” a user said.
“[It was] one of two modulus basses to die that night, the first was tossed into the crowd and later recovered. It was also used during the Californication recording sessions as well, this one is significant in the RHCP history.”

They added, “He killed probably 5-10 of these in this era. Never a planned part of the show though. I HATE that he did this to these but if he didn’t this bass would be in a museum somewhere and not on my wall.”
Another user claimed they have a small piece of Flea’s bass, which flew into the crowd at the Stockton Auditorium in California in 1998.
“Piece of Flea’s bass that he smashed at the beginning of show. Cut my hand when I caught it flying into the crowd,” they wrote.

Momofuku backs down from ‘chile crunch’ trademark after pushback from small brands founded by Asian Americans: ‘This situation has created a painful divide’
Momofuku, a food and restaurant brand started by food mogul David Chang , said it won’t defend its trademark on the name “chile crunch” after it sparked an outcry by sending cease-and-desist letters to other businesses using the term.
Momofuku started selling its Chili Crunch product in 2020, a crunchy spicy oil with dried peppers and other ingredients like sesame seeds and garlic. It’s a riff on Chinese condiment chili crisp and other similar products from other countries. Different variations of chili crisp and other hot sauces have gained popularity in the U.S. in recent years .
Momofuku acquired the trademark for the name “chile crunch” from Chile Colonial in 2023. While Momofuku holds the trademark for “chile crunch,” spelled with an “e,” it also claims “common law” rights to “chili crunch” with an “i” and has filed for similar trademark status with the U.S. Patent Office for that spelling, which is still pending.
In March, Momofuku sent seven cease-and-desist letters to companies that were calling their product “Chili Crunch” or “Chile Crunch.” Most of the companies that received the letter were small brands founded by Asian Americans.
As first reported by The Guardian on April 4, several of the companies took to social media to complain the letters were unfair, particularly since most of the brands are small and David Chang and Momofuku are so well known in the Asian American and Pacific Islander community. Their complaints went viral, sparking a debate over whether Momofuku — or anyone — should be able to own the trademark of the generic sounding chile or chili crunch.
At first, Momofuku stood by its actions. It said in a statement it was obligated to defend its trademark or it risked losing it to a bigger company that might swoop in and copy their product if it wasn’t defended. But by Friday, the company reversed course and said it would not be enforcing the trademark going forward.
“Over the past week, we have heard the feedback from our community and now understand that the term ‘chili crunch’ carries broader meaning for many,” the company said in an emailed statement. “This situation has created a painful divide between Momofuku, the AAPI community we care deeply about, and other companies sharing grocery store shelves. But the truth is, we all want the same things: to grow, to succeed and to make America’s pantries and grocery stores a more diverse place.”
Michelle Tew, owner of Malaysian food brand Homiah, was one owner who spoke out on social media after she received a cease-and-desist letter from Momofuku on March 18 that said she had 90 days to stop selling her Sambal Chili Crunch products.
Tew said in an Instagram post that Momofuku’s decision not to enforce the trademark is “a step in the right direction,” but she hopes Momofuku does more to demonstrate its commitment to the Asian American and Pacific Islander community.
“I’m so grateful for this community that have spoken loudly in support of this and rallied around small businesses like mine,” she said in the statement.

Some like it hot
Heat measure
To determine how hot a particular chili is, it's measured on the Scoville Scale (which is a measurement of the pungency), which was invented by a clever chap called Wilbur Scoville. It measures the heat by the amount of capsaicin in the chili – the compound which gives chilies their sting. Poblano chilies are one of the mildest, measuring 1,000-3,500 SHU (Scoville heat units), to the terrifyingly hot Carolina reaper (pictured), which weighs in at 1,500,000-2,200,000 SHU.
Cooling chili burn
In cuisines which traditionally use large amounts of chili, such as a fiery Indian vindaloo, some form of carb is served as an accompaniment to help temper the heat. Yogurt, cream, milk or cheese help as dairy products contain casein (a slow-digesting dairy protein), which neutralizes capsaicin.

Where's the heat?
Contrary to popular belief, it's the membrane which attaches the seeds inside a chili which contain the heat, not the seed itself. So, if you're nervous about the amount of chili in a recipe, slice off the membrane once the seeds are removed when cooking it for the first time.
Handling chilies
If you’re sensitive to capsaicin, it’s better to wear rubber or latex gloves while cutting chilies, and even if your stomach can handle the heat, it is recommended that everyone avoids touching their eyes, nose and other sensitive areas of the body during handling. Wash utensils and chopping boards in hot, soapy water after use and wash hands thoroughly with soap to remove all traces. If you do get some in your eyes, soak a cotton pad in cold milk and apply as a compress.
How to deseed fresh chilies
To remove the seeds and membrane, rub a whole chili between your palms, slice off the top and tap out the seeds. Then, slice it in half, cut or scrape off the membranes, then turn it over and flatten skin-side up, before slicing or chopping according to your recipe.
How to store chilies
Fresh chilies will keep for a week or so in the fridge – just place them loose in the salad drawer – or you can freeze them. Open freeze them on a tray and then pack them into freezer bags once frozen. Alternatively, you can whiz them with a neutral oil into a purée and freeze them in ice cube trays. Fresh chilies can also be dried on a sunny windowsill or pickled in a vinegar solution. Dried chilies will keep for 12 months in an airtight container in a cool, dry cupboard.
Cooking with chilies
Forever versatile, chilies can be used both fresh and dry to infuse dry rubs, marinades, oils and vinegars with heat. They are added to many dishes such as sauces, broths, dipping sauces and condiments. Treat them as you would any spice but, as a guide, do as your recipe suggests. If it calls for fresh chilies don’t substitute for dried as there can be a significant difference in taste and piquancy.
Green or red?
Believe it or not,green chilies are just as hot as red – they are at the unripe stage when green. Just like the difference between a green and red bell pepper, red chilies will be sweeter and more rounded in flavor, but still as hot.
Grow your own
Chilies are remarkably easy to grow if you have a hot, sunny spot in the garden or on your windowsill. Most chili plants are heavy croppers, so you don't need many, and they don't require much TLC. They just need plenty of sun and the occasional water.
Scotch bonnet chilies
Widely used across the Caribbean and West Africa, this fiery chili is so-called as it resembles a tam o' shanter (a traditional Scottish bonnet). It is a cousin of the habanero chili and weighs in at a huge 100,000-350,000 SHU. Try it in our chickpea and plantain curry recipe – an easy vegan one-pot where the heat of the chili is tempered by cooling coconut milk.

Jalapeño chilies
This Mexican chili is one of the most popular out there. It has a very broad range on the Scoville Scale, so it's a gamble on how hot they will be. They're often pickled when green – a perfect addition to a grilled cheese, so check out our recipe. The ripe, red jalapeños are smoked and dried to become chipotle.

Bird's eye chilies
Originally from South America, these small, hot chilies – both green and red – are widely used across Southeast Asia. They may be tiny, but they can come in at a mighty 200,000 SHU. They work a treat in our crab cakes recipe, where chilies are combined with green mango, lemongrass and fresh cilantro to deliver a fragrant, hot and sour flavor.

Kashmiri chilies
If you're looking for a milder chili which adds a vibrant red color to dishes, then this Indian chili is the one. It's usually found dried or in powder form, and it is a key ingredient in tandoori chicken . It's used in our beef madras recipe – a creamy, rich, spicy curry which is quick to prepare but does need slow cooking on the hob.

Cayenne chilies
More well-known in its dried, powdered form, cayenne is a great plant to grow as they are prolific and sturdy. Cayenne is about halfway up the Scoville Scale, so they do pack a good punch. The powder, of course, is a great store cupboard item as it's hot but also a little fruity. Try it in our chicken burger recipe, where the chicken is marinated in buttermilk for meltingly tender meat.

Poblano chilies
This is a big chili – nearly as large as a green pepper – and it's very popular in Mexico. It's mild and fruity, often featured in chili con carne, made into a creamy sauce or used as mole poblano (a sauce with chocolate served with meat). When dried, poblano becomes ancho chilies. Chilies in Mexican cooking
Whether fresh, dried, smoked or in a jar, Mexicans love their chilies. Jalapeño and poblano are the most popular, although Mexican cuisine often uses a few different ones to add smokiness, hints of fruit or more heat. Chilies in American cooking
Whether it's a Tex-Mex recipe or a Cajun jambalaya, chilies are dominant in many recipes across the Southern states. Chilies in French cooking

Chilies in Spanish cooking
Chilies are used sparingly in Spain to enhance flavor than add searing heat. Yet, they love their padròn peppers, which are small green peppers chargrilled with salt as a tapa, where there's always a hot one lurking. More often though they are used as paprika – smoked or unsmoked – to add gentle heat, such as in a paella with spicy chorizo sausage.

Chilies in Italian cooking
Chilies are rarely used in northern Italian cooking, but the further south you go, a little will appear. Italians use it in moderation to bring out other flavors rather than just adding heat. You'll find it in pasta sauces, such as amatriciana and arrabbiata, to flavor sausages, and there's often a touch of chili in fish dishes, such as in our pappardelle with cod and cherry tomatoes recipe.

Chilies in Korean cooking
The flavors in Korean food are unique, so you need to use specific ingredients to replicate the tastes at home. Rather than fresh chilies, they use a fermented soybean chili paste called gochugang, which is deeply savory and pungent. The Korean chili powder is gochugaru, which is spicy, smoky and sweet. Chilies in Indian cooking
Each region of India has its own culinary heritage, but chilies are used everywhere, usually blended with other spices such as cumin and cilantro, with garlic and ginger playing a starring role. Chilies in South American cooking
Given that chilies are indigenous to South America, it's no surprise they pop up in recipes across the continent. Like Europeans, South Americans use it sparingly to enhance and balance other flavors, rather than making it searingly hot. There's no better sauce than a chimichurri from Argentina for a steak. It's herb-based, with oil, vinegar, lemon and just a hint of chili.

Chilies in Caribbean cooking
You've been warned – fiery Scotch bonnet chilies are very much the chili of choice in the Caribbean. Whether they're in a traditional goat curry or a jerk chicken dish, they are usually combined with allspice – a berry which tastes of cloves and cinnamon. You can buy ready-made jerk seasoning but try making your own at home for a classic jerk chicken for the grill.

Chilies in Thai cooking
Thais love their chilies, so many of their dishes have a kick because of them. Thai curries are made with coconut milk, with fragrance from ginger, lemongrass and fresh herbs, and come with rice to cool down the heat. Chilies in Chinese cooking
Heat is a key part of Chinese cooking, where chili bean pastes (fermented soybean and chili), chili oils, dried chilies and chili powder are all part of the Chinese store cupboard. When fresh chilies are called for, use bird's eye or a larger red chili, depending upon how much heat you like.
