Our distillery bar is closed, re-opening in spring.

We’re taking some time to reset, carry out some exciting renovations, and work on some pretty epic new products. We’ll then be re-opening with a bang, just in time for G&T season on the other side of winter.

Bottle sales still available Wed – Sat 12pm – 6pm. We are still available for venue hires and events.

How to gin-gle all the way around Victoria’s boutique distilleries.

Move over pub crawls and wine weekends; distillery hopping is the latest tourism trend to take flight in Victoria. And liquor artisans are really getting into the Aussie spirit. The last decade has seen a spate of small-batch gin brewers pouring onto the state’s craft gin scene, with everything from boutique inner-city stills to uber-cool regional distillery doors catering to increasingly thirsty juniper seekers.

As well as being the self-proclaimed craft gin capital of the country, Victoria can also claim to be the home of the world's best, with Four Pillars Gin being crowned the International Gin Producer of the Year at the 2019 and 2020 International Wine & Spirits Competition.

To celebrate our local gin-fluencers, we've put together a guide to 15 of the best boutique distilleries in Victoria. Here’s how to sip your way through the state's burgeoning juniper-steeped backyard.

15 of Victoria’s coolest gin distilleries

Brogan’s way.

In the back streets of Richmond among breweries, bakeries and coffee roasters is one of Melbourne’s newest distilleries. Opening up in a former garage last October, daughter and father team Brogan and Simon Carr make a strong (57.2 per cent alcohol) Royal Blood Gin, Evening Light Gin and Everyday Salvation Gin. The latter is infused with mountain pepper berry, roasted wattleseed, strawberry gum, rose and lavender for a drink that reveals all its botanicals yet is enjoyably the sum of its parts. The bar, with its speakeasy feel and theatrically lit still, is open for tastings and cocktails Wednesdays to Sundays, with tours every second weekend.

Bass & Flinders Distillery

Past the grazing emus and kangaroos at the foot of Arthurs Seat is Bass & Flinders Distillery. This Mornington Peninsula spirit maker was one of Victoria’s first small distillers, starting with brandy in 2009. Visitors come to this state-of-the-art facility to try the pink-hued Cerise Gin, which derives its colour from hibiscus rosella, cherries and raspberries. The Angry Ant Gin is made with native gravel ants from Western Australia. Join their excellent Gin Masterclass for a chance to blend spirits infused with single botanicals to create your very own gin.

Loch Brewery and Distillery

Loch is a beautiful little town with a handful of cafes and is a short drive to wineries and the award-winning Prom Country Cheese. The cellar door inside the historic former bank carries the aroma of juniper as it soaks in the spirit inside the still. Inspired by the small distilleries of Islay off the coast of Scotland, distiller Craig Johnson started making single-malt whiskies but now makes impressive gin. Come here to taste beer and whisky, but be sure to try his gin liqueur, intended to be enjoyed neat. With just 32 per cent alcohol, the flavours of juniper, cinnamon, cardamom, angelica, licorice root, orange and ginger shine through.

Four Pillars Gin

If you want to mix yourself a gin and tonic with the world's best, this is the place to do it. Four Pillars Gin, which was crowned the world's best at the 50th Annual Wine and Spirits Competition in London, completes the gastronomic picture in pretty Healesville, with its tree-lined streets, great pub, excellent cafes, cheese shop and small cellar doors. Standing at the tasting tables in this distillery, you overlook four stills named after the founders’ mothers. In front of you are glasses filled with botanicals. Sniff and try to name the leaves, seeds, bark and roots – gum leaf, cinnamon, juniper – then taste the gin and work out which botanicals are used. With tastings, cocktails and snacks, this is a great place to learn about gin and how it is made. Plus, RACV members receive a free gift with every bottle of gin purchased at the distillery door.

Alchemy Healesville

Why not make it a double and, after checking out Four Pillars HQ, head over to Alchemy Distillers, where you can taste-test a selection of house-brewed spirits, including their gold medal-winning chamomile gin, which has delicate notes of chamomile, cardamom, cassia and rosemary. The southern American food stylings of Hominy Kitchen also go down a treat. Don’t miss their sweet potato doughnuts drizzled in bourbon caramel.

If sinking into a chesterfield lounge and kicking back with an espresso gintini or sloe gin sour sounds like your idea of a weekend well spent , then this cellar door-come-cocktail lounge is the place to do it. Animus was born in 2015, when friends and gintrepreneurs – Luke Jacques, Joel Wilson, Rob Turner and Aaron Robinson – started brewing small-batch spirits in their Fitzroy North garage. Having outgrown its urban roots, Animus now calls Kyneton’s flourishing Piper Street food scene home. Stop in for a gin flight and a platter of Goldfields farmhouse cheeses.

City slickers have embraced Melbourne’s unabashedly brilliant house of gin-soaked worship, Little Lon. The gin-timate den took up residence last year in the last remaining single-storey house in Melbourne’s bustling CBD. Here, surrounded by skyscrapers and cobblestone alleys, brothers Brad and Jared Wilson are distilling delectable juniper drops inspired by and in celebration of the precinct’s boozy, debauchery-filled past. Behind the heritage-listed, red-brick facade is a cosy cantina where you can sit back with a cocktail or classic G&T knowing you’re continuing Melbourne’s time-honoured tradition of unabated gin-joyment.

Kilderkin Distillery

It’s been decades between drinks for locals in Ballarat so, when Kilderkin Distillery opened the doors to its Alfredton outfit in 2016, it was a cheers-ful occasion. Kilderkin is the first distillery to open in the area since the 1930s, after Warrenheip Distillery – one of the first in Victoria – called last drinks. Once co-located with the Red Duck Brewery and Distillery (who also produce Red Duck gin), Kilderkin is an excellent choice if you’ve ever wanted to become more spiritually enlightened. Guided distillery tours are available for small groups.

The Whiskery

When it comes to gin, Bellarine Distillery’s botanical brews really are the cat’s whiskers. And the Drysdale-based cellar door, The Whiskery, which is pouring house label Teddy & The Fox, has locals purring with gin-thusiasm. Established in 2015, and housed in a rustic, converted shed on seven acres of lush farmland, the distillery, cellar door and cafe is an exciting addition to the Geelong region’s impressive food and drink scene.

Reed & Co

Bright’s Hamish Nugent and Rachel Reed were chefs before they turned to distilling a few years back. They found a large, bright space which they share with the excellent coffee roaster Sixpence Coffee. Hamish uses dozens of botanicals melding the aromas of the bush – mountain pepper, lemon myrtle and lemon scented gum – with the garden perfumes of lemon verbena. These are distilled with juniper and diluted to 42 per cent with pure mountain spring water to make Remedy Gin. Come also for great food cooked over the coals at night or buy a bottle to enjoy in the nearby snowfields.

Tiny Bear Distillery

Gin lovers in Melbourne's south east, listen up: we’re going on a bear hunt. This is exactly what the husband-and-wife duo behind Tiny Bear Distillery, high-school chemistry teacher Damien Anderson and his wife, Amanda, did when they decided to ditch the Great Australian Dream and build a new, gin-infused one. Fast forward three years and their micro-distillery in the suburbs is slinging seriously small batch gins and cold-brewed coffee liqueur.

MOUNTAIN Distilling Company

Get around award-winning gins at Macedon's MOUNTAIN Distillery. From barrel-aged gins to dry gins infused with native botanicals foraged from the local area, the innovative distillery is slinging a selection of seriously sippable spirits inspired by Australian ingredients. Founded by a former beer salesman and a winemaker, the philosophy behind the New Gisborne-based business, which is co-located at Mount Towrong Cellar Door, is to celebrate unique Australian botanicals, while also collaborating with local artists. Look out for their Rubens Gin, a collaborative project celebrating 10 years of Australian music with the Rubens.

Hurdle Creek Still

Housed inside a converted farm shed, you'll find this cult Victorian gin slinger. The small-batch King Valley-based producer has a farm-to-bottle philosophy, with each of the unique gins made and bottled onsite, using locally sourced botanicals and grains. As well as traditional dry styles, Hurdle Creek has a range of uniquely flavoured gins, including cherry and aniseed.

Terra Australis

Take your tastebuds on a botanical adventure with Terra Australis. A converted butter factory on the outskirts of Daylesford is home to this divine distillery, where a range of expertly crafted gins are blended by a master distiller. Anther Distillery

From the address alone, you know this place is going to ooze cool. And Anther Distillery, which is located in Geelong's vibrant Federal Mills precinct beneath the big brick chimney, does not disappoint. Its founders, a bartender-turned scientist and a professional cocktail shaker, started the distillery in 2016 as a way to blend two of their biggest passions: science and nature. Try the Florescence Gin, a boutique blend containing plants foraged from the Royal Botanic Gardens in Melbourne. When you think of an iconic distillery in Melbourne  the names Four Pillars and Starward usually come up first. Yet, as you’ll see below, there is so much scope for Melbourne’s craft spirits that you could easily thread in a distillery crawl when you want an alternative to the city’s best pubs and cafes.

If there’s anything that distinguishes Melbourne’s best restaurants , it’s the keen understanding that produce consumed as close to the source as possible results in a superior dining experience. The same logic applies to spirits; the closer you are to the source, the better.

This is why sitting down at a Melbourne distillery and working your way through the state’s best craft spirits is always worth your time. You don’t have to venture far to find a top-quality gin distillery in Melbourne, or a great whisky distillery.

1. Starward, Port Melbourne

Best for:  Award-winning whisky and an insightful distillery tour

As the most awarded whisky distillery in Melbourne and a pioneer in Australia’s booming whisky scene, Starward  is most likely the first stop for any fans of the brown stuff.

Since 2007, this stalwart distillery has been producing mostly young, intensely drinkable whiskies with a preference for those sweeter flavours garnered from sherry, red wine and bourbon casks.

Melbourne’s temperamental climate means whiskies tend to absorb oaky flavours much faster than they would in other regions, giving Starward plenty to play around with as the team experiments with local ingredients for expressions like Nova and the highly acclaimed Two Fold.

2. Little Lon Distilling Co., CBD

Best for:  A charming heritage bar set and experimental craft gin

Little Lon Distilling Co.  lucked out when the team scored this charming heritage-listed brick building just a stone’s throw from the State Library. The cottage houses one of the best gin distilleries in Australia, proudly intimate – there are only 20 seats in the tasting room – and always busy.

Little Lon’s awarded gins are also placards for the area’s sketchy past, each inspired by a notorious individual who once roamed the nearby streets. The lychee-flavoured Little Miss Yoko, for example, is named for a sex worker who lived in the cottage in the early 1900s. As such, Little Lon’s unique gin-making class doubles as a Melbourne history lesson.

3. Bathtub Gin Co., Williamstown

Best for:  Unique gins and excellent pizza

While the name references an amateur way of making gin, Bathtub Gin Co. is anything but basic. This popular micro-distillery in Brunswick is home to some of the best small-batch gin in Melbourne, which is saying a lot given the state’s eternal love of all things botanical.

A great range of flavours sits behind this experimental bayside distillery, which makes the most of local Victorian produce and caters to a broad scope of tastes. The interesting cherry-infused Best Day Ever gin makes a unique G&T, while the hardy, barrel-aged Mighty Apollo, with a solid 60 per cent ABV, will satisfy anyone who prefers some classic navy strength.

Take a seat at the bar and order some classic pizza or a charcuterie board to go with your gin tasting. It’s one of the most popular things to do in Brunswick for good reason.

4. Dukes Distillery, South Wharf

Best for:  Craft gin with big, unique flavours

Re-shaping a former motorbike workshop in South Wharf, Duke’s Distillery  is one of Melbourne’s most adventurous with a comprehensive offering that includes a towering 500-bottle wine wall for anyone not in the mood for spirits.

After years of working with grapes, the small team of winemakers behind this cellar door pivoted towards small batch spirits and liqueurs. The focus on flavour has certainly carried over with unique offerings like oyster shell gin, and pineapple coconut vodka.

The cocktail-tasting flight will take you through the fascinating range; best paired with light antipasto plates.

5. Cedar Fox Distilling Co., Coburg North

Best for:  Its stylish bar with classic gin cocktails done exceptionally well

You’ll find Cedar Fox Distilling Co. near the station in Coburg North, inside a gutted former warehouse with a slick green onyx bar and all the tools needed to produce top-shelf small-batch gin.

The label is a favourite amongst Melbourne’s best bars , pumping out incredibly adaptable gins that work perfectly in martinis. As such, the martini flight is the best way to go here, offering up three mini martinis that change regularly based on what’s popular.

In terms of food, you’re getting standard distillery fare here. Indulge in all the cheese, charcuterie and olives you could ask for. And if you’ve had your fill of gin, there’s always a list of local beers.

6. Reed & Co, Bright

Best for:  Produce-forward craft gin with native ingredients

When chef Hamish Nugent moved on from Tani Eat & Drink in 2016, he used his culinary skills to spearhead a new regional distillery out in the Victorian town of Bright and start playing around with the ever-adaptable profile of gin.

Nugent’s background comes in great use for Reed & Co , mashing up botanicals for unique gins like the flagship Remedy Gin, which has notes of eucalyptus, pine and mountain pepper.

When he isn’t foraging, Nugent is leaning on local farmers to supply ingredients like apples and green tea, all of which are used to create these interesting botanical profiles that keep Reed & Co. front and centre in discussions on the best Melbourne gins.

Given the range is so wildly diverse, a gin-tasting flight is the only way to do Reed & Co Distillery justice so tuck into a sample of some of Nugent’s latest and greatest before walking away with a bottle of your favourite.

7. Brunswick Aces, Brunswick

Best for:  A pioneering zero-alcohol range with rich flavours

Sitting at the head of the zero-alcohol movement, Brunswick Aces  is one of Australia’s most modern gin distilleries and a constant source of inspiration for local bartenders. Stroll inside and you’ll see the full range of the distillery’s innovative products, including those from other no-alcohol labels like Non  and Heaps Normal.

Brunswick Aces is one of Australia’s first non-alcoholic bars.

Set in a nondescript warehouse neighbouring popular Temple Brewing, this Melbourne distillery makes full use of its unique stills, which co-founders Stephen Lawrence and Cameron Hunt have placed behind a big glass window. Guests can watch the magic happen at any time.

The team’s unique process leads to intensely flavourful distillates that mix well in classic cocktails like the coconut and cucumber-accented King Louis which uses the label’s signature Hearts Sapiir and its notes of wattleseed and citrus.

8. Patient Wolf Distilling Co., Southbank

Best for: A two-hour bottomless gin tasting and refined classic cocktails

Having outgrown its original location in Brunswick a few years ago, Patient Wolf Distilling Co.  has ramped up production in Southbank and shot forward as one of the most anticipated craft gin labels in Australia.

Now shaped into a converted red-brick warehouse, the Patient Wolf team have much more capacity to pound out those perennial award-winners like the classic Melbourne Dry Gin and the Rouge Barrel, the latter of which gets its flavour from French oak barrels.

Park yourself at the head-turning brass-topped bar for an excellent cocktail menu covered in classics with a few surprises. If you’re feeling extra leisurely, dial into Patient Wolf’s two-hour bottomless gin package. You’ll get a full 120 minutes of unlimited G&Ts, spritzes (both alcoholic and non-alcoholic) and a healthy selection of charcuterie and antipasto, as well as a guided gin tasting.

9. Saint Felix, Mordialloc

Best for:  A bold range of signature brandies and interesting cocktails

Urban Ground, a converted car-wrecking site out in Mordialloc is a great representation of Melbourne’s creative hospitality scene. Not only is this sprawling setting home to a vibrant food truck park, but the grounds also host a health food cafe and Saint Felix, a fruit-obsessed distillery specialising in brandy .

Distiller Xavier Nalty, who co-founded Urban Ground with Robert de Santis, leads production with the help of an 18th-century Portuguese copper still and a love of bold flavours. The signature and most popular brandy is anchored by the super strong flavours of cacao and cherry, but Nalty also keeps things broad with a range of full-flavoured gins and one very unique yuzu and sencha green tea spirit.

The small bar offers tastings and food pairings, so anyone looking for unique spirits should skip the food trucks entirely and head straight to this hidden gem.

10. Naught Distilling, Eltham

Best for:     A sophisticated gin tasting of award-winning expressions

Founder and head distiller Chris Cameron has brought plenty of well-deserved awards over to Naught Distilling  and its exceptional inner-city cocktail bar. And while Melbourne has more than its fair share of gin distilleries refining classics and paving their own way forward, there’s something about Naught that has made it one of the city’s brightest stars.

The distinction comes from an air of sophistication that hits as soon as you enter the Eltham operation, with handsomely dressed staff and table service moving away from the typical bar-in-a-distillery experience and towards something a bit more high-class and intimate.

Eyeing off that powerful German-made copper still while working your way through Naught’s well-built classics while snacking on some charcuterie and tinned seafood is the ideal way to go. Order up a gin-tasting flight, which if you’re lucky will include the immensely popular Sangiovese Gin made with full-flavoured Yarra Valley grapes .

11. Anther Gin, Geelong

Best for:  Classic gin cocktails and fresh Australian flavours

Head out to Geelong and park yourself at the gorgeous, red-bricked warehouse that hosts the modestly-sized Anther Gin . Founded by Dervilla McGowan and Sebastian Reaburn in 2016, the small-batch gin label is serious about fresh botanicals and native Australian plants, taking the classic approach with highly localised flavours.

The juniper-loving signature Anther Gin is loaded with fresh pops of eucalyptus, lemon gum and finger limes – brilliant for a headstrong G&T. But the entire range is worth working your way through so grab a tasting board of three different expressions matched with tonics and botanicals. Better yet, a three-course “meal” of Anther’s signature serves will hit all the right spots for lovers of time-honoured gins.

12.   Fossey’s Distillery, Carlton

Best for:   A massive range of spirits and single malts as well as creative small plates

While Fossey’s Distillery  knows Melbourne’s love of small-batch gin is too strong to ignore, this regional distillery pays just as much attention to vodka, whisky and rum.

There’s no wrong choice when it comes to choosing a drink here.

There are over 20 house spirits to try at the Lygon Street bar, including the delicious Redgum Rum, which has been matured on 100-year-old Redgum staves and finished in oak barrels for a very strong, unforgettable profile. You’ll also find butterscotch whisky, moonshine, and blood orange vodka.

Yet the gins give this distillery its cult status for locals. Head distiller and owner Steve Timmis plays around with native botanicals like desert lime and pepperberry – and sometimes goes rogue with Christmas pudding – and constantly stretches the idea of what gin could (and should) taste like.

Go for the very hands-off gin-making masterclass if you want to put yourself in his shoes, then follow that up with a few hours at the bar sharing spirits over small plates of food that almost always uses the spirits in sauces and marinades.

13. Four Pillars Gin, Healesville

Best for:  The quintessential gin-making experience in regional Victoria

Four Pillars  is now the most renowned gin distillery in Australia, having been coated in multiple awards since Matt Jones, Stuart Gregor and Cameron Mackenzie powered up the stills in 2013.

The carbon-neutral Healesville distillery produces over a million bottles of Four Pillars gin per year. There’s barely a bar in Australia that doesn’t at least have the core range on offer, including signatures like the classic London Dry Gin, the hugely popular Bloody Shiraz Gin and seasonal releases like the Four Seasons Christmas Gin.

Surrounded by the might of the Yarra Valley, the cellar door is like Willy Wonka’s chocolate factory for gin lovers. Hang out in the sprawling gin garden or one of several bars with a gin flight in front of you. Better yet, take a gin masterclass at the cellar door so you can focus on each of the key ingredients, from Tasmanian pepperberry and Lemon myrtle to classic juniper. It might even spawn a new career path for you.

14. Loch Brewery & Distillery, Loch

Best for:  A great range of beers, gins and single malt whiskies to appeal to all tastes

The organic growth for Loch Brewery & Distillery  has remained steady since co-founders Craig Johnsson and Melinda Davies started ageing single malt whiskies back in the early 2000s. While waiting for the whisky to mature, the duo started brewing beer as per old English recipes, favouring those deep, dark stouts and natural ales to balance things out for a growing clientele.

Eventually, grape-based gins became the bread and butter for this distillery out in the regional Victorian town of Loch. Much like the beer, there was a preference for classics like London dry gin and a signature, The Weaver, with five hyperlocal botanicals.

The diversity paid off. Loch’s whiskies constantly sell out and those gins are stocked on the top shelf of some of the best bars in Melbourne. As such, you’ve got options when you want a tasting paddle at Loch.

15. Animus Distillery, Kyneton  

Best for:     An off-the-beaten-track road trip and unique range of gins

You’ll find the highly underrated Animus Distillery’s cellar door  on the historic strip of Piper Street in Kyneton, which is just over a one-hour drive from Melbourne CBD. You’re in luck if you find those old-world Chesterfield couches empty; this distillery can get very busy with its vibrant cocktail bar and signature tasting flights featuring vapour-pressed gin.

What started as a garage project in Fitzroy North is now very much the heart and soul of the Kyneton community. Since 2015, the Animus team has been producing top-quality gin using a gravity-fed carbon filter system and a broad spectrum of ingredients both from Australia and overseas.

While there are many gin labels in Victoria, the distinction here comes from those more vegetative and herbaceous notes. A great representation is the signature Arboretum gin with its infusion of strawberry gum leaf, lemon thyme, rosemary, oranges and bush tomato. This expression is often the favourite in the bar’s mini G&T flights.

16. Westside Ale Works, South Melbourne  

Best for:  A mixed crowd of beer and spirit lovers, plus a stack of board games

As both a brewery and distillery, Westside Ale Works  in South Melbourne is widely known for bold American-style IPAs nodding to a SoCal influence. But there’s also a great range of four-grain whiskies, dark rum and gin.

The broad scope means you’ll find a very mixed crowd in this converted warehouse, posted at the very relaxed, uncomplicated bar. A great mix of table and board games are spread across the space, while 30 taps take care of the beer drinkers and a tight list of cocktails showcases the diverse range of spirits.

A CLASSIC GIN WITH A TWIST OF MELBOURNE – Melbourne Dry Gin –

Inspired by a cultural capital, the Melbourne Gin Company (MGC) was established in 2012. Founded by Andrew Marks, a Yarra Valley winemaker living in inner city Collingwood. Andrew sought to doff his hat to London Dry Gin by creating the very first Melbourne Dry Gin, pioneering a new local industry while merging twin loves for gin martinis and his hometown.

MGC seeks to pay homage to a city celebrated for its culture and worthy of its own unique spirit. Made in stills that were designed for making perfume, the MGC makes classic gin with a twist of Melbourne. MGC takes an innovative approach to distillation. Its gins incorporate locally grown and native botanicals and fresh local rainwater.

MGC Melbourne Dry Gin was the very first Australian gin to be launched with such ambition and paved the way for the emerging local gin industry.

The MGC is an independent distillery with an artisan production approach. Our gins are hand crafted, batch distilled and non chill filtered.

Capturing the spirit of a cultural capital While reading Frank Moorhouse’s autobiographical Martini a Memoir, MGC founder Andrew Marks was provoked by the notion that “…every time it is served, the martini represents a journey towards an unattainably ideal drink”. This resonated deeply with Andrew, who year after year pursued perfection in his wines, while understanding that perfection is an unattainable ideal.

The thought of making gin was so daunting and audacious that Andrew couldn’t resist rising to the challenge of turning a dream into a reality. Andrew became passionate about the idea of developing a gin which paid homage to the London Dry style, while giving it a Melbourne twist. Melbourne born and bred and immersed in the culture of the city, he found the idea of creating Melbourne’s very first Melbourne Dry Gin somewhat subversive and utterly irresistible. Gin is a refreshing and versatile spirit. The skill in making gin comes down to the distiller’s ability to conceive of, extract and blend flavours. Andrew felt confident that with 20 years of winemaking experience he had the qualities essential to making something special.

Thus commenced a journey into alchemy.

In 2011 there were no books on how to make gin, so Andrew took a unique winemaking approach to distillation and taught himself. He distilled botanicals individually to understand the different flavours and aromas that they offered. He then put his blending skills to use, incorporating each botanical to create a harmonious recipe. While the MGC was established in 2012, it took a year of product development to produce the first MGC release; the Melbourne Dry Gin in 2013. Each botanical was distilled individually then blended together. Thus, it takes 11 individual distillations to make a single bottle.

After 5 years of making the Melbourne Dry Gin, in 2017 Andrew felt it was time to give it an extra twist. He started exploring a new production method by distilling botanicals together in a single distillation. The goal was to use less botanicals for more flavour. To concentrate the juniper and balance it with citrus. Juniper was steeped in alcohol overnight prior to distillation for maximum flavour extraction. Fresh and dried citrus and other botanicals were added just prior to the distillation.

After another year of refining technique to develop a powerfully aromatic juniper forward gin, the Single Shot was born.

Perfume Stills

The MGC uses stills that are designed for making perfume. These stills allow the best expression of delicate botanicals through a gentle distillation process. Botanicals are placed in the “chamber of secrets” at the heart of the still which is surrounded by a water jacket. Heat is applied to the water jacket which transmits a constant, even heat to the chamber, ensuring a delicate extraction.

There are many cross-over botanicals used in both gin and perfume making, and these stills allow spirit of the highest quality to be produced.

Juniper is the foundation botanical for any gin, while citrus provides high notes and earthier tones come from orris root and angelica root amongst others. Native ingredients such as sandalwood, honey myrtle, leatherwood honey and macadamia nut make important local contributions. Fresh local rainwater is used to cut back the distilled spirit.

This heady blend of both local and exotic botanicals is the perfect reflection of Melbourne, a thriving melting pot of culture.

About the Maker

The MGC founded by Andrew Marks. Andrew was born and raised in Melbourne and lives in inner-city Collingwood.

He is the winemaker at his family property Gembrook Hill Vineyard and makes wine under his own label The Wanderer Wines. Gembrook Hill Vineyard is situated in the Yarra Valley an hour south-east of Melbourne and is where the MGC gins are distilled.

Favourite places in Melbourne include the Royal Botanical Gardens, National Gallery of Victoria, the Melbourne Cricket Ground and the Queen Victoria Markets.

Melbourne is often considered to be the nightlife capital of Australia, being home to a number of bars – including those of the rooftop and cocktail variety – pubs and restaurants , many of which are open into the early hours so that its residents can remain suitably hydrated and fed.

Understanding that Melbourne has the good kind of drinking problem, it’s become home to its fair share of craft breweries (some of which have been in the city for decades, others have recently popped up). But, not everyone is a fan of beer (we’ll let it slide) which is why you’ll also be able to find numerous wine bars . However, for those who really love their spirits, Melbourne is also home to several distilleries – which include some of the best Australian gin brands that can easily compete with their international compatriots.

Whether it be for gin, rum, vodka or whiskey, Melbourne’s distilleries – found both in Melbourne CBD and the surrounding suburbs – offer a chance to understand how spirits are made, as well as giving you the chance to try before you buy. Some will even have a restaurant attached to them that will pair dishes with your chosen drink.

Hippocampus actually came to fruition in Perth. It wasn’t until 2017 that the distillery upped sticks and relocated to Melbourne following a merger with Melbourne brewery Boatrocker (both Hippocampus and Boatrocker Brewery are owned by the same group) to form Boatrocker Brewers & Distillers . Hippocampus’ head distiller Lex Poulsen made the move too, as did the distilleries copper still, named “Kylie”. This means Hippocampus has been able to continue producing the same delicious spirits, which include vodka and gin.

Hippocampus Gin is certainly one you need to try, being made in a steam-driven still, resulting in more uniform heating and thus, a better gin. Botanicals are left to macerate for several hours to ensure the best possible flavouring.

This quaint little distillery produces solely gin from its Melbourne CBD location – housed inside the last remaining single-storey building in the CBD – that take inspiration from the stories of the Little Lon district. The area used to be a slum and red-light district, starting in the 1850s, with buildings such as the one Little Lon Distilling Co , calls home (built in 1877), were used by sex workers.

The distillery names its gins after both real and fictional characters, and include a lychee-infused gin called Little Miss Yoko, a bottle called Ginger Mick, a fictional character created by author CJ Dennis and Captain Proudfoot, said to be a “vanquisher of vice” in the Little Lon district and one that exhibits flavours of rosemary and pine.

A visit to the distillery will allow you to not only learn of Little Lon’s history, but be shown how the gins are made, get the chance to try them and even learn how to make some delicious cocktails.

For those who prefer whisky, Starward should be your first port of call. Deliberately choosing Melbourne as its base for production, Starward claims its Melbourne’s unpredictable weather that allows its whisky to “draw out its signature fruity, delicious flavour”. By whisky standards, it’s a quick process, with each barrel (which are red wine barrels, if you needed to know) taking three years to reach maturity. Compare that to Scottish or Irish whiskies which can sometimes take a decade or so, and you’ll understand why that changing weather climate is so important to Starward.

The distillery itself is definitely worth a visit, as you can experience a full tour of the facility, engage in a whisky-making masterclass or simply just try the whiskies produced (which include special project varieties) alongside a selection of well-crafted cocktails.

Bakery Hill has been committed to producing single malt whisky from its Melbourne base since 2000. Claiming that great-tasting single malt can indeed be made outside of Scotland and judging by not only the processes the distillery uses but the awards received – including the 2020 Award for Southern Hemisphere Whisky of the Year – we’d say they’ve proved their point. Bakery Hill employs a long maturation process, much longer than other Australian whisky producers, and will only transfer it into the bottle from the barrel when it is “perfect”.

Bakery Hill encourages anyone and everyone to pay a visit to the brewery (it already attracts a healthy influx from around the world) although make sure you book ahead, as since it’s a working distillery, walk-ins can’t be accommodated.  You’ll receive a 90-minute tour which will educate you with how Bakery Hill makes its unique whiskies.

Tiny Bear Distillery was born in 2017 and founded by Damien Anderson who decided to quit his job as a high school chemistry teacher to devote his time to concoct some of the finest boutique spirits around. From the outset, Damien wanted to make sure he could oversee the entire production process from grain to bottle, cementing the distillery as a ‘Tiny’ operation.

Damien along with wife Amanda and his team make their own base spirit on-site, from kale no less. This allows them to have a much greater influence over the final taste of their product than if they simply bought in a pre-made spirit instead. Tiny Bear currently produces three gins (with two of them also spawning barrel-aged varieties) which include a Navy-strength, a refreshing kale-infused bottle, and “The Gypsy” which introduces notes of spice.

You can help in the production of Tiny Bear’s gins with a visit to the distillery or alternatively, you can sample a gin tasting paddle alongside a delectable cheeseboard.

JimmyRum is Victoria’s very first craft distillery dedicated to the production of rum. Found in the Mornington Peninsula, the distillery and rum bar only opened their doors in 2019, with the venue only being founded some 18 months prior. It’s because of this that some of JimmyRum’s products can’t technically read: legally, be called rum in Australia, as they have to mature for a minimum of three years. What it does produce is what  can  be called Cane Spirit. Regardless of legalities, everything JimmyRum produces is made with love, care and devotion to the often-overlooked spirit.

The distillery really is worthy of popping your head in. It’s a state-of-the-art facility with a huge bar, which provides an ample viewing platform to gaze at the copper still that’s known as Matilda. Of course, you can also book yourself onto an education tour, before tasting some rum alongside a charcuterie board or a selection of toasties.

Also found in the Mornington Peninsula (it was the first in the area) is Bass & Flinders Distillery . Founded in 2009, Bass & Flinders produce brandies, gins and other liqueurs, and is one of only a handful of Australia distilleries to produce its own base spirit (eau de vie) on site. Being surrounded by a world-class wine region, the distillery sources grapes from as many local producers as possible in order to give its spirits a unique flavour profile.

Botanicals used in the production of spirits are sourced from all around Australia and occasionally from other countries, and the team is always experimenting with producing something new, with some 3000 unique gins made each year.

A visit to Bass & Flinders will allow you to partake in their Gin Masterclass, which will see you become a distiller for the day, making your own bottle to take home (and reorder whenever you like).

Brogan’s Way gins are made, quite literally, in Brogan’s way. Founded by Brogan Carr along with her dad Simon in 2018, this distillery has seen some serious growth, going from a three-strong range of gins in 2019 to a now seriously comprehensive selection that also adds a vodka into the mix. Brogan is very personal and proud of the selection and is always developing new flavour profiles to satisfy gin-lovers worldwide.

The distillery itself is housed within Simon’s former automotive warehouse (he also quit his job to pursue the dream) which includes a bar made from natural Australian timber serving up a range of cocktails and snacks.

Patient Wolf Distilling Co is home to the finest gin distillery in the whole of Victoria. Behind this cellar door, Patient Wolf currently produces three gin varietals: a Melbourne Dry; a thyme and lemon-infused zesty varietal and a Sloe berry-infused gin that has been consistently popular with customers.

The bar itself could easily be seen as one of the best bars in Melbourne, owing to its New York loft-style décor, with clean lines, exposed brickwork and seating for 30. In 2005, Red Duck Brewery was launched by Scott Wilson-Browne from the converted dairy on the grounds of Purrumbete Homestead, becoming renowned for its core range of beers, including its Pale and Amber. Breweries are everywhere in Melbourne. Distilleries are comparatively rare, but the standard is astonishingly high. Whether you’re seeking gin, whisky or even non-alcoholic distilled spirits, there’s an award-winning distillery making it in Melbourne. The good news? Most of them – with a few notable exceptions, such as Starward, which is currently closed for renovations – are also open to the public for tastings and tours. Here’s where to find them.

Little Lon Distilling Co

Most distilleries need plenty of space. Yet this 20-seater, in a 19th-century cottage, squeezes in a lot. Sample Little Lon’s small-batch gins at the bar, before checking out the gin still in one room and fermentation tanks in the other. Try its fun cocktails, take a bottle home or take gin masterclass.

Brunswick Aces

Australia’s first permanent non-alcoholic bar and distillery. Try it in a well-made cocktail, or sample from one of the most impressive ranges of non-alc beer, wine and spirits in the city.

Fossey’s Distillery Lygon

It’s all about gin, whisky, vodka and rum at the buzzy bluestone outpost for the Mildura distillery of the same name. Both the bar and kitchen are making good use of the house-made hooch. Pair your saltbush Margarita with some spicy wings marinated in a signature rum-infused sauce.

A gleaming 100-litre still sits at the centre of this red-accented bar and restaurant. It’s where distiller (and chef) Carlo Tran makes the gin you’ll find in your Asian-inspired cocktails – most of which are on tap. Pair them with pan-Asian dishes such as chargrilled prawns, beef rendang, deconstructed bao and karaage chicken.

Patient Wolf Distilling Co

Find out how gin is made in the distillery, then test it out in a classic G&T, Martini or on a tasting flight. If you're feeling more adventurous, go for cocktails that draw on rhubarb, pineapple, pear and cherry. Or learn about the craft in a gin masterclass.

Westside Ale Works

Ales and loaded pizzas are the main game at this San Diego-inspired brewery – but they’re not the only draw. This spot also distills whisky, dark rum and botanical gin in limited batches. Try them neat, on ice, with a mixer or in a basic cocktail.

Urban Ground

This massive all-in-one food park, health-food cafe and distillery packs in a lot. Bee-line to the Saint Felix Distillery for its fruit-based gins, which are made in an 18th-century copper still. A mini cocktail paddle is the best way to sample the standouts.

Bathtub Gin Co.

Come to the old Stevedore’s Association building-turned-distillery for gins like the accidentally barrel-aged Mighty Apollo, Negronis infused with smoke, and an assortment of house-made spirits including brandy, whisky and limoncello.
