How To Make A Miami Vice

Can a spiked fruit smoothie be a classic cocktail? Yes… Yes it can. The Miami Vice is half Piña Colada , half Strawberry Daiquiri , and 100 percent delicious. Incorporating rum and an ensemble of fruit juices, this visually stunning frozen drink emerged somewhere out of Miami’s nightclub scene in the early ‘80s.

By many accounts, the cocktail predates the “Miami Vice” cop drama that first aired in 1984, but there isn’t any documentation of its creation. With the help of David Wondrich, the only early written mention of the cocktail we’ve found is from the concessions menu at the 1987 U.S. Open in Queens, N.Y. It reads, “At the Margarita Factory, they have something called Miami Vice Cooler, which is alternating stripes of Strawberry Daiquiri and Piña Colada — red, white, red.” Wherever it came from, it lives on as a beach bar staple.

The drink is typically served with the Daiquiri on the bottom and the Piña Colada on top, but there’s no wrong way to do it. You can pour them side by side vertically, weave alternating stripes, or just mix both cocktails together completely — though it certainly won’t look as cool. Flavor-wise, this cocktail is as tropical as they come. There’s a lot of fruit involved, so it’s on the sweet side, but the tart acidity from the Strawberry Daiquiri balances out the mix.

Miami Vice Ingredients

  • 1 ½ ounces white rum
  • 1 ½ ounces of aged rum
  • 1 cup chopped strawberries
  • ¾ ounce lime juice
  • ½ ounce simple syrup
  • 2 ounces cream of coconut
  • 2 ounces pineapple juice
  • Garnish: pineapple wedge

Miami Vice Directions

  • In a blender, add 1 ½ ounces of white rum, the strawberries, simple syrup, lime juice, and 1 ½ cups of crushed ice.
  • Blend until smooth.
  • Pour mixture into a hurricane glass and set in the freezer.
  • Wash the blender.
  • In the blender, add 1 ½ ounces of aged rum rum, cream of coconut, pineapple juice, and 1 ½ cups of crushed ice.
  • Pour mixture into the hurricane glass, layering the second cocktail on top of the first.
  • Garnish with a pineapple wedge.

Few cocktails evoke such a sense of time and place—or earn such strong reactions—as the Miami Vice. The drink is essentially equal parts frozen Strawberry Daiquiri and Piña Colada layered on top of each other. While its origins are murky, it’s thought to have originated in its eponymous city, pre-dating the popular 1980s television series of the same name.

Let’s get this out of the way: The Miami Vice is not meant to be a serious drink. In its original, intended form, it’s the cocktail equivalent of pressing two different buttons on the self-serve soda fountain at a Burger King. It’s also delicious, because Strawberry Daiquiris are delicious, and Piña Coladas are delicious. Both use flavor profiles that complement each other, so of course they taste great in a glass together.

Every comment you hear saying, “Your bartender will hate you if you order this,” misses the point. The Miami Vice came about during an era that saw the proliferation of frozen drink machines, in which the original Frozen Margarita machine (which dates to Mariano’s restaurant in Dallas in 1971) had spread across the hemisphere and was used to pre-batch countless sour-style drinks that could be poured quickly on demand. Ordering a Miami Vice, at the time of its origin, was no less taxing for a bartender than pulling two handles instead of one.

The slushy-machine version is still perfectly acceptable, and arguably an ideal way to enjoy this drink. However, as the decades wore on and bartenders sought to reinvent recipes of the past, new iterations of the Miami Vice that use fresh ingredients began to crop up, which also involved being blended individually to order. These are undeniably more complicated to make, as they essentially involve making two drinks rather than one, but can lead to a much tastier final result.

Should I Make a Miami Vice from Scratch?

If you’ve got a couple frozen drink machines and plan on making enough Miami Vices to justify batching Strawberry Daiquiris and Piña Coladas on tap, there’s little need to bother with the recipe below. However, for those that want to put in the time to make this drink at home for themselves, fresh ingredients that are blended to order can create an entirely different style of drink that offers extra flavor.

Essentially, the difference between the two styles of Miami Vice is akin to ordering a fast-food burger versus one grilled at home—both can be delicious in their own way, and each has its time and place.

Why This Recipe Works

The Miami Vice works for the same reason each of its base drinks, the Strawberry Daiquiri and the Piña Colada, works. It follows the classic sour template of spirit, sweetness, and sour lime juice, but with complementary fruit flavors layered in.

When it comes to flavor pairings in both the culinary and drinks world, there’s an old saying, “What grows together goes together.” This is particularly true in the world of tropical fruits, where it’s easy to mix and match produce while always finding a winning combination. Strawberry, pineapple, coconut, lime, and sugar cane-based spirits are all naturally complementary, and you can get away with a lot of tweaking by changing ratios or substituting other similar fruits to taste. 

If you’ve got a blender, a bit of extra time, and don’t mind putting in the work to make one of the most purely refreshing smoothie-like cocktails ever created, here’s how to create the Miami Vice yourself.

Ingredients

2 ounces rum, divided

1 cup strawberries, chopped

1 ounce lime juice, freshly squeezed

1/2 ounce simple syrup

2 ounces cream of coconut

2 ounces pineapple juice

Garnish: pineapple slice

In a blender, add 1 ounce of the rum, strawberries, lime juice, simple syrup and 1 cup crushed ice and blend until smooth.

Pour into a hurricane glass and set in the freezer.

Wash and dry the blender thoroughly.

In the clean blender jar, add the remaining 1 ounce of rum, cream of coconut, pineapple juice and 1 cup crushed ice and blend until smooth.

Pour into the hurricane glass that already contains the Strawberry Daiquiri, creating a layered effect.

Garnish with a pineapple slice.

How to Layer a Miami Vice

The go-to move to layer most drinks is to pour the top layer over the back of a spoon to float it on top of the liquid already in the glass. However, with the slushie-like consistency of the Miami Vice, this step should be unnecessary. As long as you pour each component individually and store the partially-constructed drink in the freezer while blending the second half (this will prevent it from melting), the drink should layer on its own.

Tilting the glass at a 45-degree angle to create more surface area can also help, when attempting to layer the second half, and create a different visual effect. Just remember that some swirling and interplay between the layers is to be expected, and in fact helps to create the cocktail’s dramatic look.

Okay, so like, what are you waiting for? Blend up a pitcher of this gnarly cocktail and prepare to be transported to the white sands of South Beach ('80s slang not required).

The piña colada: Yes, you have to make two different cocktails , but never fear: We’ve simplified the recipes to minimize prep time. Some piña colada recipes call for frozen pineapple or fresh/canned pineapple that is then frozen. We opted against the extra freezing time, and sweetness levels can vary in fresh and frozen pineapple so we nixed that as well. Our solution? Frozen pineapple fruit bars —keeping the sweetness consistent and cutting down on prep time.

The strawberry daiquiri: For the strawberry daiquiri, you generally need simple syrup and fresh lime juice. Here, we went with lime fruit bars and strawberry jam to shave off some time and boost flavor.

The best rum to use: Both cocktails can sometimes call for different types of rum , but that felt totally bogus to us. We went with a lightly aged and filtered white rum because it works great in both drinks. It’s the most commonly used (think Bacardi Superior), and since it’s being blended into a frozen drink and not served neat, don’t break the bank on the top-shelf stuff. When purchasing, look for a filtered white rum that comes from one region (not a multi-region blend) and is aged 1 to 6 years.

In a blender, blend ice, pineapple fruit bars, rum, cream of coconut, pineapple juice, and a pinch of salt until smooth. Transfer cocktail to a pitcher and freeze until ready to use.

  • Step  2 To serve, pour piña colada and daiquiri into glasses, either alternating flavors or stacking one over the other. Garnish with a pineapple wedge, fresh strawberry, and a couple of pineapple leaves.

Today we're going to dive into the tantalizing world of the Miami Vice, a refreshing mix that's sure to transport you straight to the sun-soaked beaches of Florida. Also fondly known as the "Cruise Ship Cocktail," this tropical treat perfectly blends the flavors of two classic beach drinks - the Piña Colada and the Strawberry Daiquiri .

  • 2 ½ Ounces White Rum
  • ¾ Ounce Lime Juice
  • ½ Ounce Simple Syrup
  • 1 Cup Strawberries

  • Pour this mixture slowly onto the top of the other mixture, causing a layered effect.
  • Garnish with a pineapple slice or strawberry, and enjoy!

The recipe above results in two horizontal layers - Strawberry Daiquiri , then Piña Colada . If you want to go above and beyond, you can pour them at the same time, with a knife separating them down the middle of the glass. This step is much easier with 2 people - trust me!

To make it a little bit quicker, easier, and cheaper, you can swap out the lime juice, simple syrup, and strawberries, for a strawberry daiquiri mix. It won't be as fresh or delicious, but it'll get the job done.

This is a really sweet, frozen drink, meaning you can definitely up the rum a decent amount without it being too overpowering. Play around with it!

Use premium cream of coconut in the Piña Colada part if you want it to be extra creamy.

If you prefer one of the sides more than the other, adjust accordingly. Have some fun with it!

A Miami Vice is what we call the marriage of two classic tropical favorites: a strawberry daiquiri and a piña colada. One taste and you’re transported to the sunny beaches of Miami (though I’m not sure Don Johnson will join you). This is a fun one to serve at poolside parties as well, as it looks bright and fruity and will cool you and your guests off in no time.

Sometimes I can’t decide between the creaminess of a Pina Colada and fruity flavor of a Strawberry Daiquiri . Both are known for their tropical flavors, both are associated with beach fun and resort getaways. So, instead of choosing, I just make a Miami Vice and get the best of both worlds!

INGREDIENTS

  • 2 oz light rum
  • 1 oz freshly squeezed lime juice
  • 2 oz strawberries (you can also use strawberry puree)
  • 1 oz simple syrup
  • 1 oz cream of coconut
  • 2 oz pineapple juice
  • 1 cup ice (divided)

Equipment Needed

  • A measuring device (like a jigger or measuring spoons) for the light rum, lime juice, simple syrup, cream of coconut, and pineapple juice

In a cleaned blender, add another 1/2 cup of ice, 1 oz light rum, cream of coconut, and pineapple juice then blend until smooth.

Pour the strawberry daiquiri mixture in a glass halfway. Layer carefully the piña colada mixture on top of the strawberry daiquiri, filling the rest of the glass.

Garnish with a strawberry or pineapple slice and a cocktail umbrella (optional). Serve with a straw and enjoy your Miami Vice Cocktail!

Tips and Tricks

  • Choose high-quality ingredients:  Like most recipes, the quality of the ingredients will have a huge impact on the quality of your cocktail. For a Miami Vice, I recommend fresh strawberries, ripe pineapples, and premium rum.
  • Careful with the ice:  Pay attention to how much ice you use. Too much and your cocktail will be too thick; not enough and it will be too thin. I recommend blending each components one at a time.

How to Store A Miami vice

Hopefully, you still have the daiquiri and pina colada mixtures separate. If so, store them in the fridge. You can keep them for a day.

If you need to store them for longer, you can freeze them in ice cube trays. This keeps the mixtures separate from the other, maintains their quality, and lets you blend the frozen cubes when you’re ready to serve them once more.

  • 1/2oz Pineapple Juice
  • 1/2oz Orange Juice
  • 1/2oz Lime Juice
  • 1/4oz Apricot Brandy
  • 1 splash grenadine syrup
  • (variation) - "Apricot Brandy, Light Rum, Amaretto, Almond Liqueur, Mango Liqueur, Grenadine Syrup, Orange Juice, Pineapple Juice".

  • 0,1oz lemon juice
  • 2oz dark rum

  • 3/4oz DeKuyper /Midori/
  • 3/4oz DeKuyper /Peachtree Schnapps/
  • 1 1/2oz Sprite
  • ice, garnish orange slice.

"Emerald Mine" recipe

  • 3/4oz Blue Curacao liqueur (DeKuyper)
  • x1oz pineapple & orange juice
  • blend with 5oz ice.

"Twilight Zone" recipe

  • 1/2oz Melon Liqueur

  • 1 1/4oz Cruzan Vanilla
  • 1 1/4oz Aperol

"Mango Colada" recipe

  • 5oz Bacardi 151 Rum
  • 1 package frozen Mango mix
  • 1 package frozen Pina Colada mix
  • mix the pina colada with 2,5oz rum and ice, then set aside. Mix the mango with 2,5oz rum and ice; while frozen, add the pina colada mix into a cocktail glass, then the mango on top, (separated), and garnish with cherry and pineapple wedge; serve with a straw.

"Mocha Chocolate Getaway" recipe

  • 3/4oz Irish Cream
  • 1/4oz Kahlua
  • 1/4 Butescotch Schnapps
  • 2 1/2oz Ice Cream mix
  • Chocolate Syrup
  • line the inside of a glass with the chocolate syrup; combine in blender all the ingredients and blend with ice, till smooth; top with whipped Irish cream and cherry.

Miami Vice Cocktail

What is a Miami Vice drink, you may ask? Miami Vice cocktail ingredients include two separate Caribbean cocktails, a Strawberry Daiquiri and a Piña Colada. What a treat! Our Miami Vice Recipe is definitely one of the best beach cocktails to transport you to the sun-soaked shores of Ibiza, Mexico or even Miami. When you can’t choose between two great cocktails, make both with this two-in-one cocktail –it really is the best of both worlds.

Why is it called Miami Vice?

Created in Miami, the Miami Vice cocktail is named after the 80s hit cop show of the same name and has been a fixture on the beach bar scene ever since. In the show, everything was over the top with 80s style and all the glitzy beach glam you can imagine. The Miami Vice cocktail is no exception and should be served just as extravagantly!

How to make a Miami Vice cocktail

Although a Miami Vice recipe does mean doubling up on cocktail ingredients, don’t be put off by this duo drink. It is really simple to whip up!

The Miami Vice cocktail ingredients include a good quality white rum. We like a Jamaican rum for this drink, such as Wray and Nephew Overproof Rum because the molasses notes don’t overpower in this fruit forward cocktail. Another good one is Trois Rivières White Rum , as the spiced honey blends well with the strawberry and pineapple flavours.

For the Strawberry Daiquiri element, you’ll need some gorgeous strawberries and fresh lime juice—both best friends with rum. Sweeten these with a little homemade simple syrup (or store bought). Blitz the strawberries with the rum, syrup and lime in a blender with a handful of ice until smooth. Pour this into a hurricane glass and place in the freezer.

For the Piña Colada part, you’ll need freshly squeezed pineapple juice (store bought is fine if you can’t get fresh) and decadent coconut cream. Tip all the Piña Colada ingredients along with another handful of ice in the blender. Give it a quick blitz until smooth. Take the Daiquiri out of the freezer and gently pour the Piña Colada over the top. Serve and enjoy!

Serve in a highball glass if you don’t have a hurricane glass  

Get jazzy with the layering and add several alternative layers for stripey cocktail  

Add a few mint leaves to your strawberry mix for a delicious extra

INSTRUCTIONS

Add a handful of ice to the blender with all of the Daiquiri ingredients and blend until smooth  

Pour into a hurricane glass and place in the freezer  

Rinse and dry the blender jug  

Add all the Piña Colada ingredients to the blender with another good handful of ice and blend until smooth  

Take the glass from the freezer and gently top it up with the Piña Colada  

Garnish with a pineapple wedge and enjoy  

The best tips for making a Miami Vice recipe

Here are some tricks to make this retro drink in the best way:

  • Ideally you’ll need a strong blender to crush your Miami Vice cocktail ingredients and the ice into a slushie texture. If you only have an immersion or stick blender, you can whizz the ingredients in a jug and stir in crushed ice
  • If you want to make this cocktail with frozen fruit, omit the ice
  • To ensure the two layers don’t blend when mixing, pour your Piña Colada over the back of a spoon for the best layered effect
  • Go wild with the garish garnish – add straws, umbrellas, strawberries and pineapple wedges to your glasses

Carnival Shares Recipes & Details New Cocktails on Next Ship Carnival Celebration

Carnival Cruise Line is offering a glimpse at some special Miami-inspired cocktails that were created just for its new ship Carnival Celebration .

The vessel’s debut this fall will continue to mark Carnival’s 50th birthday in PortMiami, where its Fun Ships first started sailing. It’s fitting, then, that the ship will carry themes of Miami not only through its architectural details, but also in its food and beverage offerings.

Bar 820 will feature several Miami-inspired tropical martinis and other drinks that will infuse an essence of southern Florida throughout each voyage, and represent a mixture of local partnerships on board.

“Miami is a rich source of inspiration for drinks, and we tapped into the city’s flavors well with what we’ve developed for Bar 820. Many of the drinks we’ll serve on this ship are the product of collaboration with brilliant partners that share our hometown and our love of fun,” said Edward Allen, Carnival’s vice president of beverage operations.

Carnival Cruise Line’s beverage team created special martinis in tribute to the line’s Miami roots, and unveiled them for the first time at Tropical Distillers near downtown Miami.

Tropical Distillers’ new distillery is set for a debut of its own this fall, and will provide an important component — JF Haden’s Mango Liqueur — for one of the ship’s new cocktails, Mango 305.

Carnival also worked with local partners Magic City Garnish and Filthy Foods to source the garnishes that will adorn each cocktail. Additionally, the cruise line’s brew team worked with M.I.A. Beer Company on a collaborative beer and the brewery’s Miami Weiss beer.

At Tropical Distiller’s new storefront this week, Carnival’s beverage team introduced the Mango 305 and two of its other new cocktails — the Flamingo and the Key Lime Pie — and shared these recipes:

  • .5 oz JF Haden’s Mango Liqueur
  • .5 oz Reàl mango puree
  • 1.5 oz Orange Juice
  • .5 oz Lemon Juice
  • 1.5 oz Flor de Cana 4 year
  • Dehydrated Mango Chip Garnish
  • 1 oz Reàl Guava Puree
  • 1 oz Lime Juice
  • 1 oz Pineapple Juice
  • 1.75 oz Bacardi Superior
  • Dehydrated Lime Wheel Garnish

Key Lime Pie

  • 1 oz Fresh Lime Juice
  • 1 oz Monin Key Lime Pie Syrup
  • .5 oz Madagascar Vanilla Syrup
  • 2 oz Bacardi Superior
  • Lime Wheel Garnish

Instructions

The instructions are the same for all three cocktails:

  • Mix all ingredients in a shaker with ice and shake vigorously
  • Double strain into a chilled martini glass
  • Add garnish

Additional beverages will be revealed when Carnival Celebration heads to Miami this fall. The new ship will join sister Mardi Gras as Carnival’s second Excel-class vessel, offering year-round seven-night Caribbean sailings starting on November 21.

The revealing of these cocktails comes just a day after Carnival announced that it is now offering its own hard seltzers across the fleet.

Commissioner Sola Participates on Shore Power Panel at Seatrade Cruise Global 2024

Commissioner Louis E. Sola participated on the Power Up Your Shore Power Plan panel at Seatrade Cruise Global where he discussed the need for shore power support across the maritime industry.

Specifically, he highlighted the differences between Port of Mobile and PortMiami to demonstrate the challenges of shore power infrastructure. While PortMiami has successfully implemented shore power, smaller ports like Mobile require more support from industry leaders to drive sustainable solutions for the maritime industry. According to the U.S. Environmental Protection Agency, shore power can reduce NOx emissions at least 95% compared to traditional diesel generators.

The primary challenge in implementing shore power is securing government support and funding for enhanced port infrastructure. The Seatrade Cruise Global event provided a forum for industry experts to discuss potential economic resources and sustainable solutions for the maritime sector.

Commissioner Sola joined this panel alongside Ole Christian Fiskaa, Port Director, Port Authority of Alesund/Sula/Norway; David Matsuda, Principal, Matsuda & Associates; Mike Watts, Principal, Watts Marine; and Jan Swartz, Executive Vice President, Strategic Operations, Carnival Corporation. The panel took place on April 9, 2024, in Miami, FL.
