What makes fishing in south georgian bay different from other parts of ontario what makes it special.

Fishing here is special because we enjoy a variety of fishing landscapes. From rivers and streams to Georgian Bay, no matter which type of freshwater angler you are, there is a picture-perfect place to go. Our proximity to such great amenities like our local restaurants and brewpubs truly reflect on fishing as a cumulative experience that few areas can match.

What is the best time of year to come fishing?

Honestly, the best time of year for fishing is based on your favourite type of fishing and species. We enjoy a healthy season throughout the year. In the spring the river banks are spotted with float and fly anglers trying their luck with Trout. In the summer the deep waters of Georgian Bay are full of boat downrigging for Salmon, while in the shallower waters Smallmouth Bass and Northern Pike are sought by small boats and kayak anglers alike. I personally do enjoy fall fishing as the air is a little crisper, and Salmon are running and feeding hard for their journey upstream. You can catch them in a boat or onshore with the leaves of the Escarpment turning golden and red. Once winter hits and the water firms up we get our huts out and guide anglers across the ice of our local area. It’s a true year-round fishing destination.

What type of fish can I catch in South Georgian Bay?

Southern Georgian Bay enjoys the fortune of being able to catch nearly every species available in Ontario somewhere and at some point in the year. There are some species that, yes there would be better areas in Ontario to try – but it’s not to say they aren’t here. We enjoy a healthy season of “green” fish – Smallmouth bass, northern pike, for example, but pickerel and muskie are harder to find. We are more known for “Silver” fish, those being – Salmon, Rainbow Trout, Lake Trout, Brown Trout. Work hard enough and put in the hours on the water and any species is possible!

What equipment does someone need to purchase if they want to get into fishing?

Getting into a fishing tackle is easy…it’s learning where to stop is the hard part! You’ll start with one fishing rod and a couple of lures, to needing a separate room to hold it all in no time – and that’s ok, it’s a part of the lifestyle. That being said, to start I always recommend that people set a budget and try their best not to buy junk right off the bat. You want to enjoy your experience, it would be like a writer who finally decided to write that book and was frustrated the second sentence in with a 5 cent pen. Now, this doesn’t mean you need to spend a lot but be cautious about quality. After all you may have your first rod/reel for the rest of your life. Any of our local tackle stores are well prepared and more than happy to assist anyone wanting to get into fishing.

Do you need to have the experience to go on a fishing charter? Do you need a licence?

With our fishing charters and most others – no experience is required. We are there to help you no matter if you’re a seasoned pro or a keen beginner – that’s what we do. On our charter boat you are introduced to the equipment, how it works and then given the opportunity to try it for yourself. Most importantly we are there to answer your questions, guide you through the experience and help you make it uniquely your own. It’s a team effort and ultimately we are all there to share our love for fishing. Taking out a group of “never-evers” is the most satisfying for me because I feel like I can help them establish a good feeling around something they’ve had an interest in, or wanted to try in a fun, safe and supportive environment. No judgement – just fun. Licensing is required by law and those details you can find on the Government of Ontario website or by visiting a local tackle shop.

What are people most surprised to learn on your fishing charter?

I think what people are most surprised to learn is how much strategy is involved with the way we fish. Fishing techniques change daily based on time of year, depth of water, area, speed, lure presentation and so much more – it’s a mystical algorithm that can only be interpreted by experience. One day you’re hot and can’t lose and the next you’re coming into the harbour with your tail between your legs – it happens to everyone. Great Lake fishing is truly an adaptive game and feels a lot more like hunting than fishing at times – but that’s why it’s so rewarding when everything comes together and that fish is in the net on the deck.

Best time to travel: June for the “White Nights” Best gateway city: Moscow and St. Petersburg, Russia Moscow and St. Petersburg Slide Show

Experience the art treasures of Moscow and St. Petersburg with guide, Amy Osaki. Begin in Moscow, continental Europe’s largest city, the seat of the government of Russia, and now home to over twenty billionaires! View iconic sites such as the Kremlin (which began as a fortress in the eleventh century), Red Square, and the sixteenth century St. Basil’s Cathedral. Then explore the art masterpieces at the Tretyakov Gallery, the National Museum of Russian Fine Art encompassing works from the eleventh to the twentieth century. Visit the Armory at the Kremlin filled with Imperial treasures including Faberge eggs once exchanged by the tsar and tsarina at Easter. Conclude your Moscow experience at the quiet seventeenth century Novodevichy Convent, one of many World Heritage sites included in the trip.

After a short flight, continue the trip with five days in St. Petersburg where you’ll be immersed in the opulence of Imperial Russia. Established by Tsar Peter I in 1703, St. Petersburg (known as Petrograd and Leningrad for most of the twentieth century) was the capital of the Russian empire for over two hundred years until the Russian Revolution of 1917. The Hermitage—said to be the largest art museum in the world with a collection of over three million objects housed in four main buildings—rivals the Louvre in Paris for both the quantity and quality of its treasures. Founded in 1764 by Catherine the Great, and open to the pubic for over two hundred years the museum is so vast that we’ll spread our visit out over several days and organize it by different themes. Also on the schedule is a visit to the Peter and Paul Fortress—the original citadel above the river founded in 1703—as well as some of the Imperial palaces in and around St. Petersburg such as Peterhof, a World Heritage Site. Peter I hired French architects to work on his many palaces, including Jean Baptiste Le Blond who worked with Andre Le Notre at Versailles. Consider enhancing your Russian experience by purchasing tickets to a performance—perhaps a ballet at St. Petersburg’s Mariinsky Theatre (also known as the Kirov).

Day 1 Overnight in Moscow Arrive in Moscow and transfer to your centrally-located hotel, your base for the next two nights. Enjoy an afternoon and early evening walk through Red Square (Krasnaya Ploshchad) past St. Basil’s Cathedral, and GUM department store all of which are back-dropped by the walls of the Kremlin fortress. Remember that we are here during the fabled “White Nights” when the summer days linger with light-filled evenings.

Day 2 Overnight in Moscow Within the walls of the Kremlin fortress, visit the Armoury Museum, one of Moscow’s oldest museums established at the start of the nineteenth century. The Kremlin Armoury was the royal arsenal; it produced and stored the weapons, jewelry and other regalia of the tsars. The museum’s collection encompasses four thousand items of applied art from Russia and elsewhere dating from the early fourth century to the twentieth century. Later in the day, visit the collection of masterpieces of the renowned Tretyakov Gallery. The Tretyakov collections were begun by the philanthropist Tretyakov brothers in the early nineteenth century. The gallery is recognized by many as a key repository of Russian art spanning the nation’s artistic tradition from early Orthodox icons to art nouveau, impressionist, and avant-garde works.

Day 3 Overnight in St Petersburg Enjoy a morning visit to the sixteenth century Novodevichy Convent named a World Heritage Site by UNESCO in 2004. The convent’s name is sometimes translated as “New Maidens’ Monastery” to differentiate is from the convent within the walls of the Moscow Kremlin. Surrounded by white crenellated walls, this complex of churches has remained essentially intact since the seventeenth century. Here you’ll find the five-domed Cathedral of Our Lady of Smolensk with its spectacular iconostasis and the tall, red and white Gate Church of the Transfiguration which is often cited as a fine example of “Moscow Baroque” architecture. The neighboring Novodevichy Cemetery is the final resting place of the likes of Anton Chekhov, Sergei Prokofiev, Dmitri Shostakovich, and Boris Yeltsin. This afternoon fly to St. Petersburg, Russia’s second largest city situated on the banks of the Neva River where it empties into the Gulf of Finland.

Day 4 Overnight in St Petersburg Start of your exploration of St. Petersburg with a visit to the Peter and Paul Fortress, the original citadel of St. Petersburg. The fortress was built to the designs of the Swiss Italian architect Domenico Trezzini in the early eighteenth century. Trezzini’s Peter and Paul Cathedral dominates the fortress grounds and its iconic golden spire punctuates into the Baltic sky. Later visit the Yusupov Palace on the Moika, acclaimed as an “encyclopedia of St. Petersburg aristocratic interior design.” The palace was the home of the Yusupov family from 1830 and 1917 and was the place where Grigori Rasputin, a spiritual mentor to Tsar Nicholas II and the Royal Family in the early 20th century, was assassinated. A visit to the Church of the Savior on Spilled Blood built between 1883 and 1907 rounds out the day. The church was built in “Russian Revivalist” architectural style by Tsar Alexander III in commemoration of his father, Alexander II. The church occupies a conspicuous location on St. Petersburg’s Griboedov Canal and contains 7,500 square meters of mosaics; the interior walls and ceilings are completely covered by mosaics.

Day 5 Overnight in St Petersburg Seeing St. Petersburg’s Hermitage Museum in a day would be like trying to see the Smithsonian in a day! Rather than a forced march through the galleries at a rapid pace, we will slow down and savor the masterpieces. Remember, there are nearly seven miles worth of exhibitions! Today we focus on “Imperial Russia,” touring the rooms decorated for members of the Russian Imperial Family and viewing the art they commissioned and collected. This is the art that influenced the style of the grand palaces of the era. View the Grand Suite of rooms, Peter I’s collection of gold, and the jewelers art owned by the Russian Imperial Family (including Fabergé eggs, gold and diamonds). Here, too, are the rooms of Catherine II and her son Paul I with their fifteenth to eighteenth century French paintings and sculpture (Poussin, Watteau, Fragonard, Chardin, and Houdon).

Day 6 Overnight in St Petersburg Return for a second dose of the Hermitage! Today is dedicated to the famous European masterpieces exhibited at the Hermitage. Feast your eyes on memorable works by Leonardo da Vinci, Raphael, Michelangelo, Tintoretto, Tiepolo, Velazquez, and El Greco. At the Hermitage, you can revel in Rembrandt; there are twenty of his works in the museum’s collection. After lunch, enjoy the eighteenth to twentieth century masterpieces of Monet, van Gogh, Gauguin, Rodin, Picasso, Matisse and Kandinsky. Digest the art and reflect on this unique collection of human creations. Consider an evening performance, possibly at the Mariinsky Theatre.

Day 7 Overnight in St Petersburg Journey by hydrofoil across the Gulf of Finland to experience Peter I’s palace at Peterhof, a series of palaces and gardens that evoke comparisons with Versailles which Peter visited in 1715. Begun in 1714 with the construction of the Monplaisir palace and expanded by later Imperial generations who added Rococo and Neo-classical elements, Peterhof is now a World Heritage Site. The creative mastery of architects, engineers, artists and craftsmen from throughout Europe is on display here and all is choreographed to celebrate water in homage to Peter, the maritime emperor.

Day 8 Overnight in St Petersburg Go behind the scenes with an excursion to the Hermitage Museum’s Staraya Derevnya Restoration and Storage Center on the right back of the Neva River north of Kamenny Island. This vast treasure house is only accessible by private tour. Later, travel to Vasilvesky Island across the river from the Hermitage to visit Menishkov Palace completed in 1721 and now the oldest stone building in St. Petersburg. Enjoy a farewell dinner this evening.

About your guide : Amy Osaki holds a master’s degree from the Winterthur Museum. She studied art at the Louvre Museum in Paris and worked as a museum curator for over a decade including six years at the Portland Art Museum. She is an award-winning art educator who has led art trips around the world for the last fifteen years with Walking Softly Adventures. Many of these trips were offered for graduate credit from Portland State University where she is an Adjunct Professor.

Introduction

The Moscow Mule keeps it classically simple with only three ingredients that most of us already have at home. Vodka, ginger beer, and lime juice.

The intense burn of the ginger beer blended with the refreshing sourness of lime juice delights the palate and warms you right up from the first sip.

There are a multitude of practical reasons for choosing a mocktail over a cocktail.

This could include health concerns and diet practices. Or, maybe you're the designated driver and don't want to miss out on a fun night with your social group.

Whatever the reason, mocktails make sure no one is left out.

Most will say that a mocktail is simply a recipe for any cocktail sans the alcoholic ingredient(s), but we're going to show you fantastic ways to enjoy a Virgin Moscow Mule without sacrificing flavor or taste.

Ingredients:

  • Sparkling Water 
  • Fresh limes 
  • Ginger beer 
  • Simple syrup

Instructions:

  • You can either muddle a couple of fresh limes or use freshly squeezed lime juice. We won't tell if you decide to do both ;)
  • Next, combine your favorite sparkling water and a splash of ginger beer
  • Add a serving of simple syrup (1 part water, 1 part sugar)
  • Stir. If you have a shaker on hand, you can also shake the combined ingredients together, but be cautious when pouring as the turbulence may have created a little extra fizz from the sparkling water.
  • Pour over ice

With this excellent non-alcoholic version of the Moscow Mule, you can have guilt-free seconds or even thirds!

Health Benefits

Typically, in every 6 oz serving of the traditional Moscow Mule cocktail there are approximately 180 to 200 calories.

One fantastic upside of making a Moscow Mule mocktail is that with the extraction of vodka (say 1.5 oz) you can eliminate around 96 calories, meaning that a typical 6 oz serving is approximately 100 calories or less!

Layers of Flavors

Now that we've laid the foundations, it's time to explore the variations and wonderful layers we can add to perfect our Virgin Moscow Mule.  With these alterations, your mocktails are sure to be enjoyed by all!

In addition to following the preparation of the basic recipe noted above, we suggest adding a few slices of fresh ginger to the mix.

To fully extract the flavors of the ginger, consider muddling it with your limes. Be careful to strain afterward, unless you want to be sucking up bits of ginger through your straw and set your mouth ablaze!

Coupled with the ginger beer, this is sure to amplify the smoldering tones of the original cocktail's taste.

Be sure to use ginger beer and not ginger ale. Most commercially sold ginger beer, though fermented, is alcohol-free. It differs from ginger ale in the way it is manufactured. The intensity of ginger essence in ginger ale isn’t comparable to that of the essence in ginger beer.

So, if you decide to replace ginger beer with ginger ale, you’ll be disappointed at the silenced flavors of ginger in your drink. Essentially, what you’d be drinking wouldn’t be a Moscow Mule at all.

Take it from us, use ginger beer!

If you would rather direct your variations or additions towards the sweet and fruity citrus flavors of your Virgin Mule, you can switch out the simple syrup for a fruit-flavored syrup.

Use a lime-flavored syrup if you would like to stay true to the original characteristics of the classic Moscow Mule.

If you're looking to put a spin on your virgin mule, don't be afraid to try any berry-flavored syrup for an extra layer of fruity goodness.

Sugar-Free Options

Not everyone is a fan of sugar and all things sweet. With this modification, the recipe can accommodate those of us who are patrolling our sugar intake due to dieting and/or health concerns.

More specifically, if you're counting calories or looking to steer clear of sugar all together, you can modify the Virgin Mule recipe by using sugar-free syrup. 

With 8 grams of sugar in one tablespoon of conventional syrup, the sugar-free option is a great way to go. A couple of dollops of the sugar-free syrup is a guilt-free way to enjoy the sweetness of this mocktail without the guilt.

Depending on your location and accessibility, you may or may not find brands of sugar-free syrup.  All the merrier if you can!

If you can’t find sugar-free syrup, another option is to use flavored sparkling water to add some additional flavour to your mocktail.  Some brands of flavored sparkling water are sold in tasty flavors with no sugar, no sweeteners, and no calories. Furthermore, the carbonation in sparkling water will augment the invigorating fizz of the ginger beer.  Win-win-win!

Serving Time

Just because we've decided to forego the alcohol component doesn't mean we're also forsaking presentation. We 're all about balance in life as well as in mocktails. So, if one component of the drink has been removed, another must be added!

And what better place to embellish then in the presentation?

It's no secret that the Moscow Mule is served in a copper mug . There are a variety of reasons why, and one of them is that copper is trusted to maintain a cooler temperature. In addition, the copper adds a "zing" to the flavor of the cocktail with each sip.

Whatever the reason, we can't deny that a Moscow Mule served in a copper mug just looks and feels right. The same is to be said for a Virgin Mule.

Besides, if we’re talking about looks, no one has to know you’re drinking a mocktail if you don’t want them to. The copper mug will keep your secret!

In lieu of serving your Virgin Mule in a copper mug, you can serve it in any bar glass. With so many types and shapes of cocktail glasses, there really is no reason why you couldn't enjoy your mocktail in a highball, an old fashion glass, or even a martini glass.

Whatever you have on hand should work just fine!

Garnish Like a Pro

Add a lime wedge to the rim and voila!

Want to take things up a notch? Drag the lime wedge along the rim of your glass, allowing the citrus to coat the edge. Turn your glass upside down into a plate of salt or sugar.

Extra points for presentation and added flavor with every sip!

For herb garnishes, clap your choice of herbs between your hands to bruise it lightly and release its essential oils and aroma.  Mint works great!

And here's an extra tip. If you have them, sprinkle a few pomegranate seeds on the surface of your drink! However, be careful if drinking with a straw as those little seeds will get sucked right up! It’s also a beautiful addition to your Virgin Mule, as you can see in the photo below.
